Turkey Pumpkin Enchiladas

We loved it; in fact so much so I made it for mid day meal and finished the leftovers in the evening. The only change was that I didn't have the pepper in adobo sauce. To substitute, I used a can of Ro-Tel and used a little less tomato sauce. The filling was superb; wouldn't change a thing there.

Spiced Pumpkin Seeds

I only had 3/4 cup pumpkin seeds from a fresh pumpkin. I intended to cut the ingredients in half, but by the time I was ready to make them, I forgot. WOW, they were so good! I did change half the salt to seasoned salt, and soaked the seeds overnight in the flavoring. I may buy another pumpkin just so I can make these again!

Sweet Potatoes with Cinnamon Chicken and Cashews

Eating healthy tasted really good the day we ate this! This was the first time I ever ate sweet potato peels, but baking this way made them as tender as a baked Idaho potato. The footnotes tell the details of my adjustments made to fit the ingredients I had on hand.

Grandma's Peach French Toast

I used whole wheat rolls because of convenience, stayed with 5 eggs because they were jumbo, but added 1 cup milk instead of the 1-1/2 others said they added. I didn't see where it was added, so I mixed it with the eggs. Maybe that was the problem, I don't know, but it was a little too much moisture, I'd cut the milk to 1/2 cup next time. Everything else was the same and was GREAT! I fixed it for brunch with my girlfriends and everyone enjoyed it. I'm adding it to my recipe box.

Little Ann's Peach and Blueberry Pie

This is an absolutely great use of fruit! I love blueberries, and am quite a critic of anything with them in there. The two fruits complement each other very well. While I usually enjoy warm pie, this one is much better cool. Because of the other review, I sprinkled cinnamon on the crust, but I think I'd have loved it with or without. The texture was good, with a perfect amount of tapioca to keep all the juice from running out when you cut a piece, but not so much that it was like jello. I used the entire egg yolk on the crust, which made it a very pretty color.

Sausage and Asparagus Spaghettini

We cut the quantity down to two and used prepared pork meatballs to cut down on preparation time. I was surprised at the perfection of the seasonings. Just enough garlic, the right amount of tomato so it wasn't dry but also didn't have a runny sauce. We'll definitely have it again during asparagus season!

Pumpkin Joe

We couldn't love it more, it makes a huge batch, but if we don't have enough company to it eat all we freeze it in batches. It's creamy, sloppy, and wonderful!

Rhubarb Lemonade

We loved it with the following changes. We included some of the pulp; it seemed bland with just the juice. Then we only thinned it with water 1:1. Again, we wanted a stronger rhubarb taste. We have taken it to a few gatherings and it's a huge hit this way!

Fresh Rhubarb Pie

We made the pie exactly as the recipe specified. The pie was perfect; the bottom crust had the same consistency as the top crust. No soggy crust as is typical with a fruit pie. No runny syrup but not a gel either. We loved it and will definitely make another one....this week.

Buttery Corn Bread

Oh my gosh; I could have eaten half the pan in 1 setting! It was fabulous. It had a sweet taste, and I'm a bit of a sugar addict so I loved that. With the butter (I used real butter) I didn't need to butter it when I ate it either.

Salmon With Scalloped Sweet Potatoes

I took the one suggestion of adding garlic; otherwise it was made as suggested. We loved it! Our son, who is quite a good cook and loves salmon, had dinner with us and he was a big fan, too.

Sweet Restaurant Slaw

My husband, who doesn't like cabbage or cole slaw, tasted it and said "that's pretty good, even if it is cole slaw." I'm a believer. I only put 1 Tbsp olive oil and didn't put the onions in. Loved the taste of the dressing!

Jon's Corn and Zucchini

Zucchini and onion sizes vary, so that could have a bearing on how it turns out. We thought the garlic was a little too strong. Perhaps a larger zucchini would have helped. As others suggested, we used only 1-1/2 Tbsp butter.

Crumb-Topped Strawberry Rhubarb Pie

I had fresh picked strawberries and rhubarb, home made pie crust, followed the recipe exactly except the home made pie crust. I put all the topping on, which was a mistake, I'd cut it back by at least 1/3. The filling could use a little more flour so it doesn't run when you cut a piece. Overall result it tasted more like a tart cherry pie than strawberry rhubarb to us.

Sweet Potatoes and Apples

Simple and delicious; we used raw sweet potatoes which we microwaved then scooped out but we had home canned apple pie filling. We had to guess on quantities for both; however, we loved it! Yes, it would have been much faster with the canned goods, but we used what we had.

Spiced Mixed Nuts

Made these 3 times with excellent results. Used about 2 1/4 c black walnuts. 2nd batch inadvertently used 2/3 cup brown sugar. Liked it and repeated for 3rd batch.

Pumpkin Chili

Great chili; left it in the crock pot and went down the the Circleville Pumpkin Show. It was nice to come home to. I used 1 can of kidney beans and also cooked some black beans. I didn't measure the pumpkin but I'd guess I added more like 1 cup.

Caramel Bars

We made 1-1/2 times the oat mixture, which turned out perfectly in the 9x13 pan. Absolutely love it! We made a 2nd batch without the walnuts, but it wasn't nearly as good as the one with walnuts.
