Chicken Piccata with Artichoke Hearts

This was absolutely delicious!!! I took others advice and didn't add the liquid from the capers or the artichokes. Can't wait to make again!!!! PS-Also didn't add the butter at all and added more wine and lemon-if you have the time to let it reduce, you don't need the butter at all.

Spinach Stuffed Chicken Breast

This was incredible-though with us being Italian, I made an Italiano version ;) I used ricotta instead of sour cream (make sure to strain the water out of both the spinach and the ricotta so it won't run), mozzarella instead of pepperjack, and prosciutto instead of bacon. It was delicious! Next time I think I may include a thinly sliced section of eggplant inside the chicken as well. Try it out! (We also watch our calorie intake, so lower fat versions of the above mentioned products were used and it was delicious!)

A Jerky Chicken

This was great! The only thing I changed was added a bit more garlic and onion. The one habanero adds a great kick! Was afraid it would be too sweet with all the brown sugar, it was perfectly balanced and added a GREAT caramelization. Oh, and I did keep the chicken breasts whole, since we had it with veggies instead of rice. Can't wait to make it again!

Peanut Butter Cup Cookies

Gave it five stars as it was, but I would give it six now if I could. I am Italian, and we love our Nutella. Try substituting the peanut butter with Nutella-bake an extra minute or so and let cool after putting the peanut butter cup in it. Even better than the original-which is hard to beat!!!

Sesame Sirloin Steak

AMAZING!! So moist and tender! I added some chopped green onion into the marinade, it was so good. Will try on chicken, but the steak was delicious!

Great recipe!! Cookies aren't too sweet because of the brown sugar which is nice. I didn't have any Oreo's in the house so I made mine with some Thin Mint cookies-aweeeesome!!

Pretty good, but needed more seasoning. We also used the light versions of the two soups, and it was yummy. Also we seasoned the potatoes with lots of garlic. Will make again!

Turkey Breast Roulade

This was great though I don't know how they managed to stuff all of that in the turkey. I bought a three pound breast and used only about 1/3 of the stuffing. So so good, make sure you get the ham sliced VERY thin. It is pretty healthy, so I served it with the country style green beans recipe. Yum-o!

Waistline-Friendly Turkey Chili

This was absolutely incredible. Don't be fooled when you first put everything in your crockpot (which is what I used). It looks way too thick, and since I like more brothy chili, I was concerned. After a few hours of simmering and stirring, it turned out incredible. It was even better the longer it was in the fridge. Will definitely make again when the temperature drops!

Rachel's Turkey Loaf

This was awesome. I added some more veggies than suggested, as well as a little garlic and it came out amazing. It seems a little mushy, but don't be discouraged. It requires a little more time to cook, but it turns out so moist, and if you add more bread or bread crumbs, it really hikes up its modest calorie count. Can't wait to make again!

Catherine's Spicy Chicken Soup

This is definitely a 5 star soup-even though I did make some changes. I cut the beans portion in half, as we don't care for them too much. Next time I think I may use the same amount of beans, but black beans. Anywho, I added 1 tablespoon of Siracha hot sauce plus 2 tablespoons of chili powder instead of just the three tablespoons of chili powder. I also omitted the sour cream altogether. I do also think next time I will add another can of corn to take place of the one lacking can of beans. It is a great soup, and only gets better the next few days in the fridge! Thanks so much for the recipe!!!

Cranberry Applesauce Muffins

These were great, and are easy to change up with different fruits/nuts. I decreased the calorie and fat content further by using 1 and 1/2 cups of applesauce, no oil, and 1/2 Splenda for baking instead of sugar. They were slightly more dense than they would have been with the oil, but a good trade off for the calories. Making strawberry pecan ones this afternoon!

Roasted Lemon Herb Chicken

Ginger Glazed Mahi Mahi

Tried this with tilapia because it was on sale at my Fresh Market. It was amazing! Super easy, I marinated it for a bit longer and served with sauteed spinach and mushrooms. Can't wait to try it again!
