Zucchini Cookies

These cookies are awesome! Super easy too! The only thing is to make SURE that your dough is super chilled, otherwise they will come out super crumbly-but that was my fridge's fault so definitely 5 stars still!!!

Can't Tell They're Low-fat Brownies

Peanut Butter Cup Cookies

Gave it five stars as it was, but I would give it six now if I could. I am Italian, and we love our Nutella. Try substituting the peanut butter with Nutella-bake an extra minute or so and let cool after putting the peanut butter cup in it. Even better than the original-which is hard to beat!!!

Great recipe!! Cookies aren't too sweet because of the brown sugar which is nice. I didn't have any Oreo's in the house so I made mine with some Thin Mint cookies-aweeeesome!!

Basil Chicken over Angel Hair

Very easy, but I did have to add more seasoning, it seemed a little bland just the way it was. I also added mushrooms and pine nuts for some crunch-was great!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Oh my GOODness this stuff is awesome!!!! I made it last night and we absolutely loved it!!! The dry rub would be amazing on a steak, and the glaze isn't too sweet. I, like others, used orange preserves because I had them from a different recipe and aren't going to use them otherwise, and it was delish. Also was a little more generous with the garlic and hot sauce, and used half the BBQ sauce, which was spicy because that's what we had on hand. SO good. We will definitely make this again. Goes great with some sauteed sugar snap peas and mushrooms. Thanks for this new family favorite!!!

Thai Spiced Barbecue Shrimp

This recipe is awesome! I am giving it five stars, even though I modified it. In my house we LOVE spice, so I followed someone's previous advice about adding red pepper flakes and being generous with the curry paste. It was awesome-super easy, and I marinated them for about 4 hours. Because of all the lemon juice, I used large shrimp due to all of the acid in the marinade-that will cause your shrimp to shrink up more. All in all AWESOME, but if you love spice like we do, I would modify it.

Shrimp Salad with Vinaigrette

This recipe was great though the dressing seemed a little bland to me so I added more white wine vinegar, pepper, and about a tablespoon of fresh orange juice. I also added sliced almonds and pine nuts, figuring it would need some crunch. I thought that the amount of pimentos it called for was extremely small, I used a whole chopped one. Only giving it four stars because I did have to make changes, but it was super refreshing. Oh, I probably should mention that I used the "Thai Spiced BBQ Shrimp" recipe, grilled them and then put it on top of the salad. If you haven't tried that recipe-you need to, it's awesome, and the two together are amazing.

Nutty Stuffed Mushrooms

Absolutely awesome and fun to make! The only thing I do is add a bit more spice, as well as fresh minced garlic. These are so fun to manipulate as well-try adding some proscuitto and romano cheese for an Italian twist!

Yummy is right! Made it just as is and it was awesome! Not as sweet as you might think, which we thought was a benefit. Goes great with some sauteed veggies or couscous!

This was a great recipe! I forgot the oranges at the store, so I decided just to zest the whole lemon-wow that was great! Next time I will remember the orange, but if you want to try just lemon, that works well too!!

Broiled Tilapia Parmesan

This is an AMAZING recipe! I followed some of the others advice-I added garlic powder and a little spice, and broiled on one side, then when flipping, added the mixture on top. It's even better when it is a bit browned, and tilapia cooks so fast. I don't like mayo, but wanted to follow the recipe straight the first time, but you don't taste the mayo at all. It acts as more of a "moisturizer' for the fish. I am interested trying a little cream cheese instead next time. EXCELLENT-try this!

Garlic Chicken

This was really good and super easy. I did however have to really season the (I used panko) and cheese blend with cayenne, salt, pepper, and italian seasoning. Really good though, chicken came out very tender. Also, more than doubled the garlic. Will make again!

Fishboy's Beer Belly Shrimp

Thought this was great! Just a few changes-added a lot more hot sauce (Siracha) and grilled instead of broiled. Goes great with a salad and some soup for a light dinner! Yum!
