Spinach Stuffed Chicken Breast

This was incredible-though with us being Italian, I made an Italiano version ;) I used ricotta instead of sour cream (make sure to strain the water out of both the spinach and the ricotta so it won't run), mozzarella instead of pepperjack, and prosciutto instead of bacon. It was delicious! Next time I think I may include a thinly sliced section of eggplant inside the chicken as well. Try it out! (We also watch our calorie intake, so lower fat versions of the above mentioned products were used and it was delicious!)

Roasted Lemon Herb Chicken

This chicken was fantastic-not too lemony. I also rubbed the mixture under the skin and took someone else's advice and put half a lemon into the cavity. Will definitely make again!

Spicy Garlic Lime Chicken

This dish was great!! I mixed all the seasonings together and diced up three small cloves of garlic. I sprinkled some of the seasoning on the cutting board and half of the garlic. I put the chicken on top and sprinkled the remaining seasoning on the chicken, covered it with saran wrap and pounded it out thin. This was really gets the seasoning and the garlic into the chicken. I also doubled the cayenne as someone else had suggested and served with a fresh salad. The man absolutely loved it, will make again!!!

Ginger Glazed Mahi Mahi

Tried this with tilapia because it was on sale at my Fresh Market. It was amazing! Super easy, I marinated it for a bit longer and served with sauteed spinach and mushrooms. Can't wait to try it again!

A Jerky Chicken

This was great! The only thing I changed was added a bit more garlic and onion. The one habanero adds a great kick! Was afraid it would be too sweet with all the brown sugar, it was perfectly balanced and added a GREAT caramelization. Oh, and I did keep the chicken breasts whole, since we had it with veggies instead of rice. Can't wait to make it again!

Catherine's Spicy Chicken Soup

This is definitely a 5 star soup-even though I did make some changes. I cut the beans portion in half, as we don't care for them too much. Next time I think I may use the same amount of beans, but black beans. Anywho, I added 1 tablespoon of Siracha hot sauce plus 2 tablespoons of chili powder instead of just the three tablespoons of chili powder. I also omitted the sour cream altogether. I do also think next time I will add another can of corn to take place of the one lacking can of beans. It is a great soup, and only gets better the next few days in the fridge! Thanks so much for the recipe!!!

Key West Chicken

This was great. Made after we both had a long day at work but I was able to get home a little earlier to get it marinating. SO easy-I used bone-in skinless chicken breasts. We are a big fan of those as the chicken stays so tender, but otherwise everything was followed exactly! Delicious-thanks!

Thought this was great! Just a few changes-added a lot more hot sauce (Siracha) and grilled instead of broiled. Goes great with a salad and some soup for a light dinner! Yum!

Garlic Chicken

This was really good and super easy. I did however have to really season the (I used panko) and cheese blend with cayenne, salt, pepper, and italian seasoning. Really good though, chicken came out very tender. Also, more than doubled the garlic. Will make again!

Broiled Tilapia Parmesan

This is an AMAZING recipe! I followed some of the others advice-I added garlic powder and a little spice, and broiled on one side, then when flipping, added the mixture on top. It's even better when it is a bit browned, and tilapia cooks so fast. I don't like mayo, but wanted to follow the recipe straight the first time, but you don't taste the mayo at all. It acts as more of a "moisturizer' for the fish. I am interested trying a little cream cheese instead next time. EXCELLENT-try this!

This was a great recipe! I forgot the oranges at the store, so I decided just to zest the whole lemon-wow that was great! Next time I will remember the orange, but if you want to try just lemon, that works well too!!

Nutty Stuffed Mushrooms

Absolutely awesome and fun to make! The only thing I do is add a bit more spice, as well as fresh minced garlic. These are so fun to manipulate as well-try adding some proscuitto and romano cheese for an Italian twist!

Shrimp Salad with Vinaigrette

This recipe was great though the dressing seemed a little bland to me so I added more white wine vinegar, pepper, and about a tablespoon of fresh orange juice. I also added sliced almonds and pine nuts, figuring it would need some crunch. I thought that the amount of pimentos it called for was extremely small, I used a whole chopped one. Only giving it four stars because I did have to make changes, but it was super refreshing. Oh, I probably should mention that I used the "Thai Spiced BBQ Shrimp" recipe, grilled them and then put it on top of the salad. If you haven't tried that recipe-you need to, it's awesome, and the two together are amazing.
