Pesto with Arugula

Reviewed: Feb. 29, 2012
2 works: Absolutely delicious. Much more complex tasting than regular pesto.

Chewy Sugar Cookies

Reviewed: Feb. 29, 2012
Made these as macaroons and they were a hit. Used splenda for baking to lower the calorie content.

Chewy Chocolate Cookies II

Reviewed: Feb. 29, 2012
I gotta say, we liked them. They are great for a chocolate fix. If you aren't watching calories though, don't try them. We however, will make again!

Cranberry Applesauce Muffins

Reviewed: Feb. 29, 2012
These were great, and are easy to change up with different fruits/nuts. I decreased the calorie and fat content further by using 1 and 1/2 cups of applesauce, no oil, and 1/2 Splenda for baking instead of sugar. They were slightly more dense than they would have been with the oil, but a good trade off for the calories. Making strawberry pecan ones this afternoon!

Sesame Sirloin Steak

Reviewed: Feb. 29, 2012
AMAZING!! So moist and tender! I added some chopped green onion into the marinade, it was so good. Will try on chicken, but the steak was delicious!

Chicken and Portobello Rollups

Reviewed: Feb. 29, 2012
Boring. Not seasoned enough, and just tasted bland. Dumping soup over this just makes it tolerable-that isn't the way we like to eat. Won't make again.

Turkey Breast Roulade

Reviewed: Nov. 22, 2011
This was great though I don't know how they managed to stuff all of that in the turkey. I bought a three pound breast and used only about 1/3 of the stuffing. So so good, make sure you get the ham sliced VERY thin. It is pretty healthy, so I served it with the country style green beans recipe. Yum-o!

Mini Pumpkin Whoopie Pies

Reviewed: Nov. 22, 2011
These are amazing, and I don't even care for sweets. Made them for my hubby's office for Thanksgiving, but might have to keep some at home after all. ;)

Roasted Chicken Noodle Soup

Reviewed: Nov. 18, 2011
This is a great soup, but I made a "Thai" version. College Inn now makes culinary chicken broths, and I used the Thai Curry Coconut one for this soup. I omitted the potatoes because I don't like them in soup, and added mushrooms. The result was awesome. I did however have to use extra broth because it does end up being rather thick, but it is fantastic.

Zucchini Cakes

Reviewed: Nov. 10, 2011
These were absolutely awful. I made as directed and they were wayyyyyyy to breadcrumb-y and thus, dry. Will never make again.

Chicken Piccata with Artichoke Hearts

Reviewed: Nov. 9, 2011
This was absolutely delicious!!! I took others advice and didn't add the liquid from the capers or the artichokes. Can't wait to make again!!!! PS-Also didn't add the butter at all and added more wine and lemon-if you have the time to let it reduce, you don't need the butter at all.

Marinated Turkey Breast

This marinade is quick and easy, an VERY good on both chicken and pork (since turkey isn't always available.) Will definitely make again!

Waistline-Friendly Turkey Chili

Reviewed: Oct. 31, 2011
This was absolutely incredible. Don't be fooled when you first put everything in your crockpot (which is what I used). It looks way too thick, and since I like more brothy chili, I was concerned. After a few hours of simmering and stirring, it turned out incredible. It was even better the longer it was in the fridge. Will definitely make again when the temperature drops!

Ginger and Rosemary Pork Marinade

Reviewed: Oct. 5, 2011
I thought it was okay, hubby did not like at all. It was, as others have mentioned, too limey. I think that I will try it again-and on chicken, I think it would be better-without as much lime juice.

Country Green Beans

So delicious. I made it with proscuitto instead of bacon, but it was still amazing. We just prefer it.

I made as fries also, which makes them a little more of a pain to flip, but they were very good!
