Irish Soda Bread
I make Irish soda bread every year for St. Patty's and this year I couldn't find my recipe so I used this one. Very good, though I did make some changes that I did remember from my recipe. I added two tbsps of caraway seeds, and used half golden and half regular raisins. De-lish!

Carrot-Sweet Potato Mash
Good but next time won't use quite as many carrots.

Pesto Chicken Florentine
This was great and super easy for busy nights. Knorr's also makes a creamy pesto sauce, so I used this instead of both the pesto and the alfredo packet. We watch our caloric intake as well, so I used skim milk in the preparation (still very creamy, I assure you) and whole wheat pasta. So good.
