Excellent recipe, and my boyfriend who worked for a long time in a German restaurant loved it! I used fresh sliced mushrooms rather than canned and would probably use about 2 containers of them. I served it with Spaetzle, but mashed potatoes would also be good.

Cuban Ropa Vieja

WOW!!! I made a few alterations to make this my own, but followed the same basic recipe, and this was EXCELLENT! Just like the Ropa Vieja I have had at Cuban restaurants! Served over rice (no tortillas) and I used a beef chuck roast instead of flank steak. Thanks for a great recipe!

Green Curry Thai for Kings

This was my first attempt at making Thai food, and I was pleased. I must have not had a very strong green curry paste, though, because I put in about 2 tablespoons of it, and it still came out kind of bland. I will make it again, and add more, though. Excellent over jasmine rice, and I will try varying the veggies and adding different things. Thanks!

Jim's Pineapple Cheese Pie

I made this for a dinner party, and the hostess asked for the recipe! It was a hit! Very fluffy and perfect for summer. Not overpoweringly sweet, but decievingly rich, so cut small slices. I made my own graham cracker crust, and the filling was the perfect amount for the 9-inch pie plate I used. A great summer recipe, and it requires so few ingredients! Thanks for sharing!

Easy Chocolate Butterscotch Cookies

This is the easiest and best cookie recipe I have come across! I used it with chocolate cake mix but added Andes peppermint chips to make Christmas cookies and they were FANTASTIC! Can't wait to experiment with other kinds of chips and cake mixes. I didn't think they were too sweet or used too much oil as other reviewers complained. Perfect.

Chicken Noodle Casserole

Well, I hardly followed the recipe at all, but it was GREAT! I took it to a potluck and had rave reviews! I added carrots, broccoli and mushrooms and used some cream of chicken soup and less of the broth. I also made it lowfat with skim milk and fat free soup and used whole wheat noodles. A crunchy topping like stove top or crackers adds some good crunch, too. I think it's one of those casseroles that you can adapt to the way you like it. I will definitely make it again and do more experimenting.

Pineapple Chicken Tenders

So easy and so delicious! I added crushed pineapple to the marinade and used Splenda brown sugar blend, and these were great. I got rave reviews from my party guests. I will definitely make these for my next party.

Annie's Fruit Salsa and Cinnamon Chips

I LOVE this stuff! The great thing about this recipe is that you can customize it to your preferences. I omitted raspberries but added crushed pineapple. I've also used splenda in place of the sugar and it turns out fine.

Thai Chicken Tenders

My first attempt at a Thai recipe. I served over rice and veggies. I didn't have any cayenne pepper, so I added a dash of tabasco, and found it to be fine and not too spicy.

Bacon Quiche Tarts

I had a hard time "stretching" the biscuit dough enough to cover the muffin cups, but other than that, this recipe was a hit! I made them for office breakfast club and everyone loved them. Nice and portable and not messy. And it's easy to leave off the bacon and do some of them plain for vegetarians in the bunch.
