Tomato Soup I

Great recipe! Took multiple other suggestions 1. tempered the cream into the tomato soup to prevent curdling. 2. Subbed 1/2 of the cream for milk. 3. Added a splash of vinegar and a puttanesca (Red pepper flake) mix at the end. Served it along with bean and cheese quesadillas. Family loved it. Absolute goodness!!! Thanks!

Cod Fish Cakes

This was yummy. I followed the advice of several other reviewers (added additional spice, flour) to start. used sweet potato, because I had those on hand. The mix was a bit sticky. Used a light coating of flour which made it better to form into cakes. The family liked it overall, hubby and I both thought it could use a sauce, a little spicy kick.... Definitely thought refrigerating may help as others suggested. I saved some to fry up for dinner tomorrow in the fridge. Overall great recipie, will try again! Thanks!

Fluffy Pancakes

I have been searching for a recipe for fluffy pancakes for some time, and I'm happy to say I found it! Whoa!, absolutely fluffy and delicious. For dietary needs I subbed 1/2 c of oat flour ( ground whole rolled oats in a blender), cut the sugar in 1/2. Delicious, don't think this took away from the recipe at all. Will definitely become a house favorite! 3 year old loved them, 13 year old couldn't stop eating them. thank you for sharing!

Ricotta Breakfast Pancakes

Tried them for dinner tonight, and they were great! I was short on pancake mix, so subbed in some buckwheat flour. Was a little short on ricotta, but still got a sense for the delicious texture of these! They weren't so fluffy for me, likely because of the buckwheat flour, but still great. Topped with "all natural" table syrup and thawed out some frozen strawberries.... fantastic! My three year old gobbled them up, and so did the rest of us! Oh and served them up with a little side of bacon. thanks for posting!

Greek Green Beans

Delicious green beans! I love the greek style green beans at a local restaurant, so was excited to try this recipie. Texture is perfect! Used can tomatoes and turned out great! Great go to dish year round! made them on a cool summer evening and they were great. Paired with roasted chicken and potatoes, but see how they would be just fine on their own. thank you soo much for sharing!

Happy Roast Chicken

Yum! Never would have thought to roast a chicken in a cast iron pan, moist, juicy, flavorful and simple to make! Was worried that the dijon would dominate the seasoning, but not the case at all. Def will make again, weeknight and/or for friends and family who come to visit. Used a chardonnay that I had on hand, added some fresh rosemary to the cavity from the garden also... took suggestions and added a little water to the wine. delicious! Thank you for sharing! absolute winner!

Black Bean and Corn Quesadillas

nice recipie! thanks for sharing! used refried beans, and frozen roasted corn cuz that's what I has on hand and it turned out great! thawed the corn and thinned the beans with a little water...yummy! will def keep in the dinner rotation!

Whole Wheat Pumpkin-Applesauce Muffins

My two year old loves these! (need i say more?). In fact the entire family loves them! So hard to get those veggies in, these are power packed, fast, convenient...inexpensive and provide breakfast and snacks for a couple days. making them again tonight! thanks for sharing!

Terrific Turkey Chili

Tasty! Followed it to the letter, added more tomatoe and thinned with a littke extra beef broth....oh and added some cumin. Could have used a tad more heat, but great recipie that seems very forgiving to a twist here and there. Loved the addition of zucchini! By far one of the best turkey chilli recipies!

The Best Meatballs

Delicious meatballs! The texture was perfect! I wound up needing only about a cup of water. Browned them on the stove and then cooked them some more in a red sauce in the slow cooker to finish em up. Fabulous go to recipe for meatballs! yay!

Mexican Shepherd's Pie

Good comfort food with a twist. I used two boxes of corn bread and cut down the water amount as I read in other reviews, but I think I would have preferred a tad more meat and having it be a little more moist. Used lean ground turkey and a little not so lean. Came out great, but maybe next time just go for the less lean turkey.

White Chocolate Raspberry Cheesecake

My 11 year old and I made it for my husbands birthday (who loves cheesecake) and it was delicious and easy to make. We used honey grahm cracker's for the crust and double the amount to get enough to cover the pan. Substituted one low fat cream cheese for one of the three and never noticed a difference in taste. Excellent recipe, thanks!
