Cream Puffs

Flavor was great. Cream filling excellent and the texture of the puffs were great. I loved them and I will definitely be making again....why the 3 star rating, I took other reviewers advice and poked holes into the sides of the puffs 2 minutes before they were done with wooden skewers and they did not deflate. Out of curiosity I left one puff alone with no holes and it deflated. That was my only casualty but don't worry it did not get wasted, one must test before serving to make sure they are really good lol. The writer should include those instructions which is why I only gave 3 stars.

Chef John's Swedish Meatballs

Yummmmm This recipe changed my hubbys view of Swedish Meatballs. He was not a fan from past experience but we both loved your recipe. I had to do some substitutions because I didnt have all of the ingredients. I didn't have beef broth so I used 4 beef boulion cubes. I didn't have All Spice so I used Apple Pie Spice (which is nutmeg, cinnamon and all spice). I had to cut back a smidge on the Nutmeg ingredient because of this. I Also added more cayenne, I doubled the cayenne because I love my pepper. By doing this it added some heat to the sweet. I didn't have plain breadcrumbs (surprisingly) but I did have have seasoned Panko breadcrumbs so I used those. I also used ground turkey instead of the main meat ingredients. I dont usually like to substitute until after I tried the recipe for the first time on its own, but aside from the meat and double cayenne I don't think my alterations would have made a major difference in the flavor. Thank You Very Much this is a great recipe, gonna try your Fried Chicken today.

Candy'D Sweet Potato Cupcakes with Brown Sugar Icing

I'm rating just the frosting on this one. I will try the cupcakes soon. I like the frosting, but I will tell you it is very sweet at fist. Let the frosting and cakes cool completely or it will be overwhelmingly sweet. Also, you can use salted butter if you have no salt butter.

Reuben Sandwich I

I liked it, I liked all ingredients but the kraut, or maybe because it was the supermarket brand canned stuff. I am 37 years old and never had sauerkraut, my hubby had and likes "Rachels" so I tried it....he said it was just ok, he thought it was the type of kraut too. But all other ingredients were good, I ate the other 1/2 of mine without the kraut and liked it. Maybe its just me, is there a brand of kraut I should use instead of the other stuff?

Chef John's Buttermilk Fried Chicken

Chef John you made another great recipe and made my hubby and me very happy. I have to disagree with the reviews that said the chicken lacked flavor, I thought it was great flavor. I also have to disagree with people about problems with frying. You do have to keep a close eye on the temp of the oil and adjust accordingly, as everyone's oven is different, and can vary depending upon the amount and kind of chicken used (I used skinless single serve chicken breasts). I will definitely be making again, Thank You!

Black Magic Cake

I have made this cake twice. The first time it was a tad difficult to get out of the pan as other reviewers stated but I also didn't flour it like I should have. I also didn't care for the strong coffee taste (I used Starbucks Pikes Peak K Cups). Very Moist cake though, and I noticed that as each night went on the cake lost alittle of the strong coffee taste. I used a coconut buttercream frosting off this site and after the 1st night it was very tasty without the coffee flavor. Second time, my hubby suggested using water instead of coffee, but then I thought it lacked something. Also, for some reason the cake came out very brownie type dense. The only difference was water instead of coffee. I wonder if my baking powder was bad??? My third time I will be trying with hot cocoa instead of coffee and water. And will make sure my baking powder is not expired.

Whipped Cream Mousse Frosting

Excellent!!! This is my favorite frosting, and there are ohhh so many flavor options. Example I used another members chocolate cake recipe and turned it into a white chocolate cake, then I used this frosting and instead of vanilla flavored instant pudding I used Pistachio on a white chocolate cake....came out wonderful. I used the original recipe on a regular chocolate cake for my friends birthday and she loved it....Thank U!

Cannoli Dip

Let me tell you something....I think the kids loved this almost as much as the adults. My friends 5 and 6 year olds loved the fact they could dip little Nilla cookies into this sweet dip. They thought it was the greatest thing. And the adults thought it was equally as clever and yummy. Its a winner!

Sweet Potato Cupcakes with Toasted Marshmallow Frosting

Really good, even though omitted the marshmallow frosting and used a caramel drizzle type frosting. I used canned yams like another reviewer did, and I got the ones in syrup by accident, so I drained the syrup and washed any residue off the yams. Also, ran out of muffin liners so just sprayed the pan with cooking spray, no problems with sticking. I will definitely make again.

Pumpkin Pancakes

Not liking this. The first thing I found wrong was the ratio of wet to dry ingredients. I was so frustrated I watched a video on here on how to make pumpkin pancakes, which shouldn't be hard but I am not a breakfast cook. The video states a CUP of pumpkin not an entire can, every other ingredient and measurement was the same. When there are too many wet ingredients it tastes raw and undercooked. Too many dry and it didn't cook right. I did not like the spices, too little pumpkin flavor and too much allspice. I will experiment with the ingredients and read through more reviews because the concept of pumpkin pancakes sounds yummy.

Orange Baked Acorn Squash

I made this both the way as written and then with my modifications. As written it is good, not great and as another reviewer stated, the orange is overpowering and they were slightly under cooked. But nontheless I wanted to try it again my way as it had potential. First I baked the squashes at 400 for 45 minutes face down and brushed with a smidge of olive oil around the edges. Second I halved the orange concentrate and upped the butter by a tablespoon. Also added a 1/2 teaspoon more of brown sugar. And added chopped peeled empire apples to the centers (another reviewer had suggested that). Cooked for another 20 minutes and done. The apples will not be soft or like the consistency of apple pie apples but they add something.

Pumpkin Fluff Dip

Yummm. I loved this....I used fat free cool whip and didn't have pumpkin pie spice so I used apple pie spice and added a little more ginger and cinnamon to taste. Great idea!

Spiced Maple Pumpkin Seeds

I did not like this recipe. Mine came out burnt and sticky. My pan was coated in butter, had to clean 2x because of all the butter. Not sure if its too much butter, the cook time or the sugar but mine were inedible. And I really wanted pumpkin seeds since I haven't had them since I was a kid. I will not make this again.

Roast Beef and Gravy

So heres the deal....I don't own a crock pot, because my hubby hates them he thinks the house is going to burn down and food comes out mushy. So I had to improvise because the ingredients looked good. I cooked at 350 for 2 hours in the oven with all ingredients and added fresh onion and garlic and used 1/2 of the onion soup mix as a rub. What I will do differently is add the soup and broth 3/4 to half way through because my roast came out well done on the bottom and med rare on the top, which kind of worked out for us because he likes well done and I like rare. We'll see next time, will definitely make again.

North Italian Meat Sauce (Ragu Bolognese)

I liked this, I wasn't in love with it though. I make my own bolognese but I wanted to see what someone elses tasted like and this got good reviews. First off I did not use the chicken livers, nor will I ever as I don't like them. Secondly I couldn't resist not using garlic, I added garlic powder to the meat while cooking. I used deli prosciutto and added alittle pepperoni. What I liked was the creaminess of this sauce and celery and wine, and nutmeg, my sauce has none of those things. What I think I may do is incorporate those into my sauce, but this is a good weeknight meal that dosen't require an entire day of cooking. I prep in the morning and my hubby finishes off the cooking at night since we have different schedules.
