Risotto with Chicken, Sausage and Peppers

I love this, I used bone in chicken breasts the last time I made this (I have made 3 times) and came out great. The only thing I changed was the amount of the hot green pepper, I only used half of one, just to give it a slight kick.

Whipped Cream Mousse Frosting

Excellent!!! This is my favorite frosting, and there are ohhh so many flavor options. Example I used another members chocolate cake recipe and turned it into a white chocolate cake, then I used this frosting and instead of vanilla flavored instant pudding I used Pistachio on a white chocolate cake....came out wonderful. I used the original recipe on a regular chocolate cake for my friends birthday and she loved it....Thank U!

Fabulous Fudge Chocolate Cake

Very moist. I made it according to directions for my friend's Birthday and it was a huge hit. However, I must confess that I did not try the icing in this recipe because I used a whipped cream mousse posted by another member. I also have decided since making this according to directions to improvise. I did this with white chocolate and then improvised the whipped cream mousse to a pistachio flavor and it was sooooo good. The only thing I changed slightly when using white chocolate was minimized the vanilla by a 1/2 teaspoon since white chocolate is already sweet I figured the vanilla might be too overpowering.

Black Magic Cake

I have made this cake twice. The first time it was a tad difficult to get out of the pan as other reviewers stated but I also didn't flour it like I should have. I also didn't care for the strong coffee taste (I used Starbucks Pikes Peak K Cups). Very Moist cake though, and I noticed that as each night went on the cake lost alittle of the strong coffee taste. I used a coconut buttercream frosting off this site and after the 1st night it was very tasty without the coffee flavor. Second time, my hubby suggested using water instead of coffee, but then I thought it lacked something. Also, for some reason the cake came out very brownie type dense. The only difference was water instead of coffee. I wonder if my baking powder was bad??? My third time I will be trying with hot cocoa instead of coffee and water. And will make sure my baking powder is not expired.

Hamburger Steak with Onions and Gravy

Yummmm, we make this once a month. So easy and filling, true comfort food the only thing I recommend doing is making more of the gravy, must add it to the mashed potatoes.

Chocolate Cream Pie II

Tastey BUT it didn't set for me either and I live East Coast coastline, so altitude shouldn't be the problem. Next time I will take Jay's advice and add another tablespoon of cornstarch, because mine came out soupy. I will update my review after the next time I try it.

Chef John's Swedish Meatballs

Yummmmm This recipe changed my hubbys view of Swedish Meatballs. He was not a fan from past experience but we both loved your recipe. I had to do some substitutions because I didnt have all of the ingredients. I didn't have beef broth so I used 4 beef boulion cubes. I didn't have All Spice so I used Apple Pie Spice (which is nutmeg, cinnamon and all spice). I had to cut back a smidge on the Nutmeg ingredient because of this. I Also added more cayenne, I doubled the cayenne because I love my pepper. By doing this it added some heat to the sweet. I didn't have plain breadcrumbs (surprisingly) but I did have have seasoned Panko breadcrumbs so I used those. I also used ground turkey instead of the main meat ingredients. I dont usually like to substitute until after I tried the recipe for the first time on its own, but aside from the meat and double cayenne I don't think my alterations would have made a major difference in the flavor. Thank You Very Much this is a great recipe, gonna try your Fried Chicken today.

Vanilla-Pear Breakfast Oatmeal

Very good and healthy. Don't need much brown sugar because the cinnamon and vanilla and sweetness of the pears (I used the light syrup kind) are sweet enough for me.

Chef John's Buttermilk Fried Chicken

Chef John you made another great recipe and made my hubby and me very happy. I have to disagree with the reviews that said the chicken lacked flavor, I thought it was great flavor. I also have to disagree with people about problems with frying. You do have to keep a close eye on the temp of the oil and adjust accordingly, as everyone's oven is different, and can vary depending upon the amount and kind of chicken used (I used skinless single serve chicken breasts). I will definitely be making again, Thank You!

Macaroni and Cheese with Caramelized Onions and Bacon

Amazing mac & cheese. Made it 2x and the 1st was exactly as written and it was awesome. The second time I did it with using a package of already cooked bacon (less messy), not as good as written but still yummy. Also I cut back the asiago to 2 cups and added more sharp cheddar, I liked it that way better.
