Antipasto Squares

I made these last year for Christmas Eve and they were a hit! I did half as the recipe calls for, and the other half I added pesto and sun dried tomatoes (instead of the roasted red peppers). YUMMY!

Italian Wedding Cookies III

Unbelievable! Everyone at my work raved about them, and told me they were better than the cookies made by a local gourmet bakery. I rolled them in powdered sugar twice (once when they were warm, and once when they were cool). I will definitely be making these again and again and again :)

Chantal's New York Cheesecake

My husband loves cheesecake and begged me to make him one for his birthday. I was a little hesitant, because I had never made one before and I knew how difficult it was to make the "perfect" cheesecake. The night before his birthday, we went to Ruth's Chris for dinner and of course, he ordered cheesecake for dessert. It was by far the best cheesecake we had ever had. The next night he ate my cheesecake and said mine was even better than the cheesecake from Ruth's! Seriously, best cheesecake ever.

Almond Chocolate Coconut Cookies II

These cookies are awesome. I have only made them once but they lasted only a couple of days! Next time I would double the recipe. Definitely try these, you will love them!

Charline's Sweet Potato Casserole

This recipe is amazing! I made it for thanksgiving, Christmas, my christmas potluck at work, and for Easter... The only change I made was to substitute pumpkin pie spice for the nutmeg since I am not a huge fan of nutmeg. But it's wonderful!

Angel Chicken Pasta

I was really excited to try this recipe, but was pretty disappointed. I don't like the taste of processed foods and I thought the sauce tasted like it came from a jar... It was edible, but would not make it again.

Chicken Enchilada Soup III

If you like the chicken enchilada soup form Chili's, then you will love this! For those of you who are unclear, masa harina is just a corn flour (similar to corn meal but ground much finer) and you can find it at your local grocery store. If you can find the masa, then definitely make this soup! You will not be disappointed.

Cajun Seafood Pasta

This was a GREAT recipe! My boyfriend loved it, but from now on, I will have to double the recipe in order to satisfy his tastebuds!!!. In order to cut out fat, I used fat free half and half and thickened the sauce with a flour/water mixture. I also added mushrooms sauteed in butter to the sauce. Note to all: This recipe is very spicy. I love spicy food, but I would recommend cutting back a little on the black pepper in order to save your tastebuds. Overall, this recipe was wonderful. My boyfriend keeps asking when I am going to make it again!!!!
