Oven Scrambled Eggs

Reviewed: Sep. 8, 2013
WOW - why didn't I find this sooner?? Our house is often used as the gathering place for friends and family, so it happens fairly often that I have a houseful of guests to feed breakfast to. I am able to make 2 pans at one time to serve the masses. All of the ingredients are too much for one 9X13 pan, but I just used a slightly larger pan and didn't have any problems with overflowing. It is perfect as it is. No need to make any changes or substitutions. Thank you so much for posting this. It gives me a fresh breakfast to feed friends and family and gives me more time to spend with them instead of standing over a stove all morning.

Blueberry Buckle

Reviewed: Aug. 20, 2013
Doubled the recipe to make a 9x13 pan. An 8x8 pan of this yumminess would be lucky to last 24 hours around my family. Don't change a thing on the recipe. It is delicious.

To Die For Blueberry Muffins

Reviewed: Aug. 7, 2013
It was an incredibly easy, moist and delicious muffin! I made the muffin recipe exactly as written, but ran out of white sugar for the crumb topping, so I used brown sugar instead. My husband just bought 20 pounds of blueberries, so I will be making these often! This recipe is definitely a keeper!!!

Chocolate Chocolate Chip Cookies I

Reviewed: Dec. 17, 2012
I made these cookies just as the recipe reads (opting not to add walnuts) but I baked them as a bar (I hate babysitting the oven with cookies) and my family LOVES them. They were fluffy, moist, chocolatey and delicious. The whole pan only lasted 2 days in our house! Great recipe!

P.J.'s Fresh Corn Salad

Reviewed: Jul. 24, 2011
Our new summer favorite! I used frozen corn, green pepper and a white onion (very finely chopped) in place of the fresh corn, red bell pepper and red onion, only because that is what I had in the house. It is fresh and tasty... and addicting! I can see having this salad in my fridge all summer long.

Rhubarb Cake II

Reviewed: May 31, 2011
I was a bit skeptical as I was making this cake. Really? Nothing to stir or mix? Yes, it is really that easy and yes, it is that delicious. The whole pan was gone within 24 hours at my house! I used sugar free Jell-o, and this is going to sound strage, but all I had was strawberry kiwi... it was still AWESOME. My new summer favorite! Thanks for sharing the recipe!
