About this Cook
A tropical girl at heart! Came from New England to Florida and realized how much I love the heat. At 30yrs old, I met an Italian man vacationing in Fl. We fell in love and am now living in a small town in Italy, teaching a bit of English and raising my incredible 11 yr old daughter.
My favorite things to cook
Being in Italy, I don't have the convenience anymore of shortcuts. I like to cook calzones that my dad taught me to make with broccoli, onions and tuna. Stuffed clams, tempura, i dabble in a bit of Mexican, fried rice, meat dishes. Different pasta dishes, salads and baked goods.

Best Chocolate Chip Cookies
OH MY GOODNESS!!! I Live abroad and often have difficulty with conversions or ingrediets... However, I followed the instructions and even watched the video..exactly..i did add some chunked up milk chocolate since all we have here are small semi sweet chips. But these were the best i've ever, and I mean ever have had..... Made the dough yesterday and chilled it overnight. Retained their shape so if you want a slightly flatter cookie, you may want to press it down a bit with a fork or spoon. It depends on your preferences. We don't have cream of tartar here either but I would have liked to try that little tip. I will never use another recipe again. Why keep searching when perfection has been reached!!

the photo looks wonderful. If I may suggest first , using only Buffala mozzarella. It's more expensive but a higher and finer quality. Also cut slices equal to that of the tomatoes and layer them in a circle, tomatoe, cheese, large basil leaf. Then drizzle vergine oil, and a sprinkling of balsamico.
