Quinoa Muffins

Very good stuff - my first batch I used shredded carrots and zucchini instead of shrooms and onions. Some comments indicated a lack of flavor so I added about 1 tsp of fennel pwdr, dash of salt and pepper. In preparing the quinoa, I added about 1/4 cup of chia mix and 3/4 cup quinoa to 2 cups water and by mistake used the whole portion in my muffins - it made 12 muffins AND and I chose to not add the cheese, no reason, just cuz! NOTE, remember to allow your quinoa to cool so you don't cook the eggs upon adding the quinoa to mixture. Flavor was really yummie - in part due to the chia, added a nice texture, and the fennel - thanks!!

Artichoke Chicken

One great recipe!! I've made it several times and have loved it. The only thing I did different was to substitute 1/2 of the mayo with sour cream. I found that I had to cook it a bit longer than the 30 minutes, but that might have to do with the size and thickness of the breasts. Recipe is easy, little hands-on and hard to miss - highly recommend!

Rusty Chicken Thighs

I made this last night for a family get together. It was too dark to bar-b-que, so I baked it. It was sooooo delicious! I used chicken breasts(S/B)and thighs - put the breasts in first, then when half way done, added the thighs and basted the breasts with some of the marinade - oh so good. Did not change anything with regard to the recipe listed. Will make again and again - and bar-b-que (or bake) next time.

Spinach and Tortellini Salad

Excellent salad! As being one to hardly ever make something just as the recipe says, I really appreciated this one. I did add some yellow bell peppers and Italian zucchini primarily for additional color. Did not have parmesan on hand so substituted tomato/basil feta - did a nice job adding a bit different flavor profile - and used less than called for dressing. Thanks - very yum!

Oh-So-Good Chicken

Its great to have these recipes - some as a starting point. I like to add a little more creativity so - I sauteed the mushrooms with a bit of the salsa, added a small can of diced green chilis (really good), a dash of cayenne powder and a sprinkle of crushed red peppers!!
