Easy Pleasy Mac N Cheesy - US Navy Style
I don't know if it was the quality of the processed cheese that I used (store brand vs name brand) or that I substituted cream of mushroom soup (and it was 98% fat free), but the taste was very bland, and I didn't like that the cheese was in globs in the dish. I didn't use the cracker topping, so after the 30 minutes I stirred it up to incorporate the cheese into the sauce and put it back into the oven for a few minutes. The taste was just lacking something. I put a bag of shredded sharp cheddar (8 oz) into it and mixed it all up again and baked it another 10 minutes. The sauce prior to the cheddar was on the loose side and after was very rich. I think I may have used a little too much. Next time I'm going to use the cheddar soup and a little bit of dry mustard (before adding any cheddar) and see if that makes a difference.

Simple Hamburger Stroganoff
I cut the cream cheese by half, used one can of golden mushroom soup and one can of cream of mushroom, and two four ounce cans of sliced mushrooms. Other than that, the only thing I did differently was the steps since they didn't make sense to me. I browned the ground beef and drained it, then added the brown gravy powder, milk, soups, mushrooms, and cream cheese. I cooked that on medium low until the cream cheese was melted and the whole thing was bubbly. I cooked the noodles in the meantime. After I added the meat mixture to the noodles, I stirred in the sour cream. I think next time I might try adding a splash of wine to give it a little lift.

Mom's Pineapple Bread Pudding
I just soften the butter before I mix it with the sugar until it's all blended before adding the eggs, then add the drained pineapple. As much as I love it (especially leftover and extra toasted), it always tastes best at the holidays.
