Chicken Fried Chicken

This was awesome! I made just a few changes. First, I used 1 lb chicken tenders instead of breasts and I omitted the potato flakes as I didn't have any. I also used 2 eggs, and I reduced the amount of pepper to 1/4 t because I didn't want my kids to tell me this was "too spicy". Then I dipped the chicken in egg, dredged in flour, dipped in buttermilk, then coated in the cracker mixture. This was just barely enough cracker crumbs to coat all of the chicken pieces, so I will adjust accordingly next time. Cooked in about 1/2 cup of canola oil (because my skillet was really big and deep) for about 3-4 minutes on each side, about 5 tenders at a time. It turned out so light and crispy and was cooked just perfectly on the inside. Fabulous, and my kids LOVED these and even asked for seconds, which is practically unheard of at my house. My daughter even asked me if I would make this more often, so this recipe is definitely a keeper!! Served it with country gravy, mashed potatoes and green beans...great comfort food! Husband and I decided I could have definitely used the full amount of pepper called for without the chicken being spicy, so I'll definitley do that next time to add just a bit more flavor. Banana Pancakes I

After reading some of the reviewers' comments that the pancakes were burnt on the outside and mushy in the center, I made a few changes to the recipe. I increased the sugar to 1/4 cup (we like a sweeter pancake), added 1/2 teaspoon of baking soda in addition to the 2 t baking powder, decreased the milk to 1/2 cup, decreased the oil to 1 tablespoon, added a dash of cinnamon, and also added chocolate chips. My batter scoops were about the size of a 1/4 cup, and this made about 16 pancakes. Made them for my 7-year-old my son and his friend for breakfast after a sleepover, and they both loved them and demolished half the platter. My son's friend requested I share the recipe with his mom so she can make them! Definitely a keeper recipe!

Frosted Banana Bars

These had a great flavor and I liked them a lot, but I'm not sure what I did wrong, because these came out moist, but crumbly like a box cake mix instead of dense and chewy like I would expect a "bar" to be. They fell apart easily when trying to cut them and get them out of the pan. I frosted them with a cream cheese icing and they tasted great. Just need to tweak the recipe somehow to get them to come out more dense for me.

Marble Swirl Pound Cake

Made this recipe yesterday. After reading other reviews, I decreased the amount of flour to 2 3/4 cups, and I also decreased the cooking time to 45 minutes because my oven tends to cook hotter than most. Otherwise, I followed directions exactly as written. The first problem I had was that the cake would not release from the bundt pan, even though it had been thoroughly greased and even after following directions for cooling. I tried to use a plastic spatula to help the cake release, but it was stuck to the top of the pan and ended up tearing when it came out. Regardless, I figured it would probably taste good, even if it wasn't pretty, but the cake is just ok. The chocolate flavor really doesn't come through, and even though I decreased the amount of flour, it came out very dry. Definitely need a glass of milk to drink with it. I think the recipe could call for some oil to make the cake the cake more moist, and I think next time I might substitute baking chocolate for the cocoa powder.

Baked Spaghetti

I would like to try to make this again. I didn't have any cottage cheese, but I did have ricotta so I used that instead (just as I would in lasagna), but my family and I just did not enjoy this. An entire pound of spaghetti noodles was too much, and there wasn't enough of the meat sauce to suit our tastes, so it just seemed like we were eating noodles baked with lots of cheese and a little bit of meat sauce. It didn't have much flavor. Next time I will definitely try it with the cottage cheese, but I think I will also decrease the amount of noodles and add a little extra sauce.
