Banana Pancakes I
After reading some of the reviewers' comments that the pancakes were burnt on the outside and mushy in the center, I made a few changes to the recipe. I increased the sugar to 1/4 cup (we like a sweeter pancake), added 1/2 teaspoon of baking soda in addition to the 2 t baking powder, decreased the milk to 1/2 cup, decreased the oil to 1 tablespoon, added a dash of cinnamon, and also added chocolate chips. My batter scoops were about the size of a 1/4 cup, and this made about 16 pancakes. Made them for my 7-year-old my son and his friend for breakfast after a sleepover, and they both loved them and demolished half the platter. My son's friend requested I share the recipe with his mom so she can make them! Definitely a keeper recipe!

Frosted Banana Bars
These had a great flavor and I liked them a lot, but I'm not sure what I did wrong, because these came out moist, but crumbly like a box cake mix instead of dense and chewy like I would expect a "bar" to be. They fell apart easily when trying to cut them and get them out of the pan. I frosted them with a cream cheese icing and they tasted great. Just need to tweak the recipe somehow to get them to come out more dense for me.

Baked Spaghetti
I would like to try to make this again. I didn't have any cottage cheese, but I did have ricotta so I used that instead (just as I would in lasagna), but my family and I just did not enjoy this. An entire pound of spaghetti noodles was too much, and there wasn't enough of the meat sauce to suit our tastes, so it just seemed like we were eating noodles baked with lots of cheese and a little bit of meat sauce. It didn't have much flavor. Next time I will definitely try it with the cottage cheese, but I think I will also decrease the amount of noodles and add a little extra sauce.
