Slow-Cooker Chicken Tortilla Soup
Fantastic! I love Mexican food and this recipe is great. I'm from the Southwest, so I know when I find a good one. I was surprised that this tasted so good with all of the canned ingredients. I skipped the corn, but did take the other reviewers' advice and used frozen chicken breasts, I've also made it with leftover chicken, and boneless, skinless chicken thighs.
When I'm all out of chicken broth, I just use chicken bullion cubes. I always double or triple this recipe because it doesn't last long enough for my family of 5 to have decent leftovers if I don't.
It's a versatile recipe - I've even added rice to it. Tonight I'm going to add black beans because I have some left over, I'll update and let you know how it goes.
Shortcuts are my thing, so we too use bagged tortilla chips. I've sliced avocado in it and a dollop of sour cream, sooo good! My kids love it - even the toddlers. :-) This one is a keeper! Don't judge it til you try it!
