Best Ever Muffins

This is such a great base! I tried Katie's suggestion and preheated the oven to 425 and then brought it back to 400, and it worked out really well. I used 1 cup wheat flour and 1 cup white. And I substituted unsweetened apple sauce for the vegetable oil. I made mine on the smaller size, and it yielded about 20. Thanks for the recipe!

Cajun Baked Catfish

I live in New Orleans, so good catfish is always available. This recipe was super easy and full of flavor. I was worried it would be too spicy, but it turned out just right. The only thing I would recommend is that you use garlic powder instead of garlic salt and then add salt to taste. My dish came out just a little too salty.

Lower Fat Fudge Brownies

I used lowfat Vanilla yogurt, too, instead of plan yogurt and the vanilla extract. I thought they tasted great, but the texture was way off. They were very rubbery, like other reviews have said. When I brought them to work, I had to call them "bars" instead of brownies, so that people would try them.

Outrageous Chocolate Chip Cookies

I made enough to bring to work, and everyone loved these cookies. I use 1/4 cup butter and a 1/4 cup natural, no sugar added apple sauce, and no one even noticed. Great recipe -- and so simple! Thanks so much for posting.

Wall's T-Bone Steak Marinade

I made this for my boyfriend's birthday, and he loved it! I didn't have a grill, so I had to broil it, but it still turned out juicy and full of flavor. We used the leftover juices as gravy for some baby red potatoes, and it was delicious. I also used this same marinade in a roast I made in the slow cooker, and it turned out really well. Thanks for this great recipe!
