Creamy Summer Vegetable Salad

Good recipes to add whatever vegetables you have on hand! I added fresh dill to give it a little more punch.

I have made the original recipe (which is delicious), but have since taken the original concept and expanded on it. I have made these with ham, swiss and mushrooms; chicken, broccoli and cheese; sauted vegetables; ruebens; and taco meat, cheese, olives and tomatoes. So many options yet to try. Thanks for a great recipe!

Hash Brown Casserole II

A warm and creamy potato dish. I added a half pound of diced, fried bacon and tossed it all in a slower cooker. Left the cornflakes off though as I thought they might get soggy cooked that way. Very good!

Northwoods Wild Rice

What a wonderful, nutty side dish! I made the dish in advance, reconstituted dried cranberries and added them to the mixture. Also, I stirred in the bacon and the cashews instead of leaving them on top. It was my dad's favorite part of the meal!

Vegetable Ham Stew

This was nice to have on a cold night in front of the fire! I left out the sugar and didn't miss it! I added some additional veggies and some pasta and it was thick, warm and good!

Parmesan Broccoli Balls

Didn't need to cook the broccoli because it was thawed. Made the changes recommended by others: more cheese and less eggs and butter. Everyone liked them a lot, but me - I didn't care for them. I'm not a big boxed stuffing fan so that is probably why.

Pesto Lasagna

This was very good! However, I did add two boxes of spinach to give it more filling. I also added mushrooms and used red sauce. I did not boil my noodles, just soaked them in warm water and they were perfect. Yum!

German Lasagna

I made two kinds of lasagna for a party and this one was the hands down winner! Unfortunately, there was only one piece leftover. Used no boil noodles and they worked beautifully. Shared the recipe with several of the guests!
