Blackberry Barbecued Pork Tenderloin

I am going to give this recipe a 4. I altered it too much to know how the actual recipe turns out but this was a GREAT dinner. I love cooking but i have been in a slump lately. This recipe sparked that fire again and i am so thankful for that! Here are my alterations. It was too cold in Ohio to grill so I marinaded my pork in italian seasoning/dressing for 35 minutes. I cooked it for about 45 minutes on 350 in a greased roasting pan. I dumped the marinade in the roasting pan with the pork so it would have some extra time to infuse the flavor. while it was roasting i took the blackberry jam and my homemade chipotle bbq sauce and put it in a sauce pan and brought to a boil. i reduced the heat, addded a few pinches of cocoa powder, 1 tsp honey mustard and let reduce for 30 minutes. For the last 5 minutes of the cook time on the pork i basted the loin with the blackberry sauce. I added fresh apple slices to the blackberry reduction. Let the pork rest for 5 minutes, sliced on the diagonal and drizzled with the blackberry reduction and top each plate with an apple slice. This was AMAZING!!! I'm having my parents over for dinner tonight and this is what I am making. I am serving it with a garlic and white wine orzo dish!

Crispy Chipotle Lime Tilapia with Cool Avocado Sauce

This...was SPICY. Definately not for the sensitive pallet. But that was okay for me. I ran out of the breading so half way through coating the fish, i had to make more. I used cod bc I didn't have tilapia and i used chicken breasts because my boyfriend is not a seafood fan. So...i foiled the pan and sprayed with PAM. Still stuck. and when i flipped the meat over, the bread crumbs fell off. So i scrapped them off the pan and layed ontop of the meat. on to the avocado sauce....weird flavor. I added cilantro hoping that would help. negative. i thought, well maybe it will be awesome on the fish. took it out, plated it and topped with the sauce. garnished with cilantro. Took a bite and NOT A FAN. I don't know what it was. Just....too much spicy (too overpowering for such a delicate fish) and the avocado was just weird. I threw this one out. Sorry.

Homemade Black Bean Veggie Burgers

This is a great recipe. I made black bean tacos last night and had a large bowl left of the beans. I would have given this recipe 5 stars but couldn't since I didn't follow it to a T. My left over beens had corn and roasted red peppers, cilantro and cayenne pepper in them. I didn't have any green bell peppers but I did have the roasted reds. I also used a sweet chiptole mustard as the condiment Overall, a GREAT recipe. I won't buy frozen burgers anymore knowing how easy they are. One thing i would caution is that these are very HEARTY. I made them the same size as I make regular burgers and they were too big. I would say this recipe would make 6 filling patties.

Italian Sausage Soup with Tortellini

I have made this soup probably 2 dozen times and each time i love it more and more. I don't change anything about it, its perfect as it is. Next time I make it i'm going to use andouille sausage just to see how that compares!

Chili Cheese Snacks

very simple and tasty recipe! Thanks for sharing this. I followed the recipe to a T but used a bit less olives because i didn't have a 1/4 cup of them. When i spread the mixture on the dough, i sprinkled it with more cheese and a dash of chili powder. Then, after I put them on the baking sheet, i sprinkled again with chili powder. They turned out GREAT and they were a hit at my new years eve party last night. I am definitly keeping this recipe.

Tuscan Cream Cheese Spread

this cheese spread was the HIT of my new years eve party last night. Great flavor!!! I am thinking for the left overs (i doubled the batch) I want to throw some bacon in it and heat it up in the oven. I think it would be just as good!! Thanks so much for sharing this recipe with us!! Its a keeper for sure!

Cheese-Stuffed Jalapenos

i was NOT a fan of this recipe. The worcestershire sauce was an odd taste and the mixture didn't melt very well at all. My family is a huge jalapeno popper family but these just sat on the table at my new years eve party. I think the cream cheese needs to be less and more cheddar cheese and something else added to the mixture not the W sauce. sorry...wont be wasting my time on these again. and just a tip to those who want to make these but have kids around, make sure you are able to vent your house out. the heat from the peppers fills your air and my 1 year old was not happy with it.

Bacon Water Chestnut Wraps

great recipes. usually i make these with just a splash of teriyaki sauce on them the last 3 minutes of cooking but these were different. I liked that that the sauce mixture made a glaze on them. I didn't cook the bacon first, though and I used sliced chestnuts because thats what I had on hand. Also, i think the 2 cans was a bit much but maybe there are fewer whole chesnuts in a can. Thanks for sharing this recipe with us! It was a hit at my new years eve party last night.

Slow Cooker Chicken Taco Soup

this soup was an absolute hit at my dinner party. We do a thing called a "soup swap". It was so so good. It tended to be a little thicker like a chili. To take care of that, I imagine you would just add a bit of water or another can of tomato sauce. I garnished with fresh cilantro, sprinkle of cheddar cheese and a dollop of sour cream. Definately will be making this again!!! Even better the day after.

Caribbean Jerk Pork Chops

these were okay. I guess im just not a fan of pork chops but they did have a good flavor. Left in the marinade overnight. My boyfriend really liked the flavor of them. I think we served them with wild rice.

Chili-Lime Chicken Kabobs

i have made these 3 times in the last two weeks for different people and they are amazing. I don't change anything about the recipe. Although, i dont measure things...but they are GREAT!! I let the chicken marinade overnight so the flavor is absorbed. I always do that no matter what the recipe calls for. The results are always much better. Thanks for sharing the recipe!

Marinade for Steak I

THIS MARINADE IS A MUST FOR ALL STEAK LOVERS!! I used this marinade on 1 inch thick sirlions and let it 'get happy' for 24 hours. The ONLY thing I added was as suggested by other reviews was about 2 or 3 T of A1 sauce to cut down on the soy sauce taste. When i put it on the grill, I did put more black pepper on top and added a little bit of grated parmesan cheese too. And basted the steak with left over marinade while cooking. My boyfriend said "is there anymore" and i made sure there was no leftover juices on my plate when my steak was gone. This was BY FAR the best steak i have ever made and i've made some good steaks in the past. Thank you for sharing the recipe. I have emailed it to LOTS of people and printed a copy for all meat-eaters here at the office. I am never using any other steak marinade.

Spicy Turkey Burgers

i thought these were wonderful. The only concern is that if you are looking for an alternative meat because of fat, turkey is definately not the answer. But they were tasty and have made serveral times!! Thanks for sharing!

Filet Mignon with Rich Balsamic Glaze

I made this for my boyfriend, my roommate and her boyfriend and it turned out great. The only reason i didn't give it a 5 star was because I did take other users suggestion on adding brown sugar to the reduction. I couldn't taste the difference. As other viewers said, I was discouraged by pungent vinegar smell. I was hoping the sauce would have a little more umph to it. I seasoned my filets with fresh ground pepper and garlic pepper grinder from McCormick (a new favorite). I put them on the grill and they turned out fabulous. I served with the red skin roasted garlic mashed potatoes and parmesan crusted asaparagus from this website. Everyone said it was the best filet they had ever had. Thanks for the recipe!

Acapulco Chicken

There was no flavor to it at all except heat. The combination of the veggies and the sauce was unappetizing. I have been with my boyfriend for year and cook dinner every night. I made this recipe about a month ago and we could not finish it. We ordered pizza. It's the only thing Ive made that he hasn't absolutly loved. And he couldn't even tolerate the taste.

Creamy Jalapeno

I was expecting a lot more from this recipe than I got. I used 3 WHOLE jalapenos (with seeds) and twice as much cilantro as called for. The ranch seasoning was WAY overpowering. I think next time I will use half a packet of the seasoning, use a habenaro for a kick. I also had to add about 3 tablespoons of flour because it was way too ruiny for cracker toppings. I loved the cool flabvor of the cilantro followed by the zing of the pepper. If you are looking for a spicy dip, this isn't for you. Unless you add a few other peppers to give it the kick you are expecting.

Best Black Beans

I did a 'fiesta night' dinner last night and used this recipe for a side dish. It smelled amazing when it was cooking and tasted just as amazing. As part of my meal I made the fried jalepenos and the fired up southwest fajitas with chicken (all from this site). If I ever have to live off of beans, these will be the ones I make!!! Thanks for sharing!

Blackened Chicken

This recipe was absolutly fabulous. Definatly not for the person who is afraid of flavor. I took advice from other readers and did not heat my oil for 15 minutes. And it didn't create smoke like other readers insisted. Although, i did open my window just a crack and took the battery out of the smoke detector. Thanks for the wonderful recipe!!! Will DEFINATLY use this again!

Jay's Jerk Chicken

This was a GREAT recipes. I do have to admit, though, that the smell, color, and texture of the marinade was a little strange. But the taste was FABULOUS. I let me chicken marinade in the refridgerator for 24 hours so that the flavor went all the way through the meat. My fiance doesn't like spicy stuff so I rinsed the marinade off the chicken breast. The meat still had a good flavor but didn't have the kick mine had. Great recipe!!! Will definatly use again.
