Blackberry Barbecued Pork Tenderloin
I am going to give this recipe a 4. I altered it too much to know how the actual recipe turns out but this was a GREAT dinner. I love cooking but i have been in a slump lately. This recipe sparked that fire again and i am so thankful for that! Here are my alterations. It was too cold in Ohio to grill so I marinaded my pork in italian seasoning/dressing for 35 minutes. I cooked it for about 45 minutes on 350 in a greased roasting pan. I dumped the marinade in the roasting pan with the pork so it would have some extra time to infuse the flavor. while it was roasting i took the blackberry jam and my homemade chipotle bbq sauce and put it in a sauce pan and brought to a boil. i reduced the heat, addded a few pinches of cocoa powder, 1 tsp honey mustard and let reduce for 30 minutes. For the last 5 minutes of the cook time on the pork i basted the loin with the blackberry sauce. I added fresh apple slices to the blackberry reduction. Let the pork rest for 5 minutes, sliced on the diagonal and drizzled with the blackberry reduction and top each plate with an apple slice. This was AMAZING!!! I'm having my parents over for dinner tonight and this is what I am making. I am serving it with a garlic and white wine orzo dish!

Crispy Chipotle Lime Tilapia with Cool Avocado Sauce
This...was SPICY. Definately not for the sensitive pallet. But that was okay for me. I ran out of the breading so half way through coating the fish, i had to make more. I used cod bc I didn't have tilapia and i used chicken breasts because my boyfriend is not a seafood fan. So...i foiled the pan and sprayed with PAM. Still stuck. and when i flipped the meat over, the bread crumbs fell off. So i scrapped them off the pan and layed ontop of the meat. on to the avocado sauce....weird flavor. I added cilantro hoping that would help. negative. i thought, well maybe it will be awesome on the fish. took it out, plated it and topped with the sauce. garnished with cilantro. Took a bite and NOT A FAN. I don't know what it was. Just....too much spicy (too overpowering for such a delicate fish) and the avocado was just weird. I threw this one out. Sorry.

Homemade Black Bean Veggie Burgers
This is a great recipe. I made black bean tacos last night and had a large bowl left of the beans. I would have given this recipe 5 stars but couldn't since I didn't follow it to a T. My left over beens had corn and roasted red peppers, cilantro and cayenne pepper in them. I didn't have any green bell peppers but I did have the roasted reds. I also used a sweet chiptole mustard as the condiment Overall, a GREAT recipe. I won't buy frozen burgers anymore knowing how easy they are. One thing i would caution is that these are very HEARTY. I made them the same size as I make regular burgers and they were too big. I would say this recipe would make 6 filling patties.
