Cheryl's Spinach Cheesy Pasta Casserole

Excellent with some easy modifications. Reviewers who said this needed spices are so right - we added garlic and fresh basil, as well as a little salt and pepper. Fresh spinach also makes this livelier. This was great with the Muir Glen Spicy Tomato Sauce.

Pan-Seared Chicken Breasts with Shallots

Yum. Do as everyone else says - double the sauce, add 1 T corn starch, serve with mashed potatoes (especially baby reds).

Basil Cream Sauce

Really tasty, but it came out rather thinner at the end than I would have liked. Added a flour/butter "clay" to the pot, still simmering, to improve consistency.

Creamed Corn

Too liquidy, too bland, and really fatty. Reducing the fat and cream content would improve it, but I won't be trying it again to find out.

Honey Orange Basil Chicken

Awesome, no changes necessary, but I do like a stronger basil flavor. Alternative for a stronger orange is to use 1/4 cup of frozen orange juice concentrate. Yum.

Cracked Sugar Cookies I

Spinach And Tomato Filo Pastry Parcels

This was super good with some modifications, the other reviewer is right in that it'd be quite bland as written. Our additions were some garlic and a tomatillo (a little beastie that looks like a small green tomato wrapped in lettuce leaves. uncooked, it tastes quite sour, but once cooked, it has just a little bite).

Mediterranean Chicken Salad

This was super! I left the olives out, and don't feel like we missed anything. We used the Kraft Sun Dried Tomato dressing, and a lot less than the recipe called for, which makes it much healther than the nutrition info here suggests.

Irish Soda Bread Cookies

Tasty, especially with the hint of caraway. Caraway is a new flavor for many people and a good accent to the currants. I doubled the number of currants and would love to have had even more!

Caribbean Chicken Salad

This was one super salad! I made it basically per the instructions (this time, at least!), and loved the results. There was too much tomato/onion mix and too much dressing, even for five people, but it was a s-u-p-e-r-b light dinner.

Terrific - a good change of pace. I also doubled the sauce recipe for one chicken, and added some extra tomato paste so it would spread nicely (as the recipe wanted, it was *very* heavy on onion!)

Spinach and Cheese Pie

Definitely needs additional spices! I also wish that it had been more mixed, instead of all the cheese and then all spinach, but that could just be me. If you're looking for a baking dish - this was a little too much for an 8 x 12 x 2 Pyrex.

Strawberry Shortcake

Do reduce the baking powder to 2 tsp. This is a dry shortcake, but I think many of the people who were disappointed in it expected a sponge-cake-like shortcake, instead of the biscuit variety. These are supposed to be dryer, and get their moisture from the strawberry juice and whipped cream served with them.
