Stir and Drop Sugar Cookies I

Quick, easy, and tasty! I left out the lemon zest because I didn't have any lemons, but they still turned out good. Also, I stirred the dry ingredients instead of sifting them, without any disastrous consequences.

Cream of Pumpkin Soup

I added a cup of cooked split peas to the blender and used 2% milk instead of cream. As others suggested, I used pumpkin pie spice and added a little brown sugar. Word to the wise: it's probably not a good idea to put hot broth in your blender or food processor. Let it cool first or melt a few ice cubes in it. Also, I felt the croutons were too big when cut into 8 pieces, but maybe that's just my personal preference.

Gluten Free Rice Chicken Stuffing

This actually tastes a lot like stuffing! I ended up using fresh diced onion, diced celery, and fresh parsley because I needed to get rid of them, but I'm sure it's good with the dried versions, too.

The ratio of potatoes to everything else is too high. Use fewer potatoes, more of everything else. Don't let your husband go crazy with dried jalapeño flakes.

Wabbit-Approved Carrot Raisin Salad

Great, easy recipe! This was good with plain yogurt; I thought about using vanilla yogurt, but with the juice from the pineapple and the raisins, it had enough sweetness.

Italian Chicken Sausage Risotto

Very good risotto! I played with it a bit, though: I made it vegetarian by using lentils instead of sausage and using vegetable broth; I used brown rice (which meant longer simmering time, of course) and peas and carrots instead of just peas.

Corn Mexican-Style

In a word: delicious! I used a southwest frozen vegetable blend (corn, black beans, mild chili peppers, red bell peppers, onion) and used "Fiesta Lime" salt-free seasoning in place of the paprika, pepper, cayenne pepper, lime peel, and half of the salt. Goes great with Pupusas de Queso from Allrecipes.

Brussels Sprouts and Barley Soup

Great soup! I used frozen mixed vegetables in place of the turnips, carrots, and green beans because I didn't have time to run to the store. I replaced some of the salt with salt-free herb seasoning to reduce the sodium a bit, too.

Tarragon Beef Stew with Vermouth

A nice stew with a tangy, slightly sweet flavor. I had to substitute seasoned vinegar for the the Worcestershire sauce because my husband is allergic to fish. I also omitted the water and boiled the stew with the lid off for most of the cooking time, as other reviewers suggested.
