Mom's Best Macaroni Salad

People were haggling over the leftovers when I took this to a potluck. It was the "WHO made THAT?" dish. I don't need another macaroni salad recipe. To save money I limited it to green peppers, and I suggest making it a scant half cup not a very full one. So delicious! We're making it, and I know I'm going to have to control myself, because it's too good!

Jenni's Turkey and Dressing Pie

Disappointing! Thought this would be a good way to use Thanksgiving left-overs. DH, who generally eats anything I make for supper, only ate a few bites. The changes I made were using shredded turkey instead of ground, using homemade dressing, and adding a bit of extra cheddar: all upgrades. This is a no repeater with no potential.

Texas Sheet Cake I

I've been making this for years, and it is always a hit. To those who think the frosting is too thick, you need to frost the cake while the cake is still HOT. The frosting melts and is partially absorbed into the cake. There is no need to thin the frosting.

Chili Dog Casserole I

You'd have thought I actually cooked. Family all ejoyed this more than eating chili dogs. This is an easy dish teach kids to make, too. My tweeks: Toasted buns before putting in dish, added onion, left off mustard

Summer Corn Salad

3 of 5 in our house really liked it, and it was so simple! It's perfect for cooking with kids. The teen boys would have preferred plain corn. That being said, I couldn't find corn on the cob, so I used canned plus fresh salsa I'd made that day. It had tomato, onion, garlic, lime, and cilantro. I also added green pepper and skipped the basil, as the fresh herbs were poorly stocked at the store. I didn't bother cooking it, just mixed and chilled and ended up with a sweet and tangy dish that lured my veggie hater to go back for seconds. Her vote outweighs the boys this time, and it's a great way to doctor canned corn.

Blender Chocolate Mousse

Read the reviews and see the inconsistent results people get with it setting up. I used 2T rum extract for the alcohol, and after several hours had to move it to the freezer. Good, rich taste, but babysitting in the freezer to get it to set is why I give it 1 star. Too many people are having the same problem with it being runny.

Blender Chocolate Mousse II

Used 2T rum extract instead of brandy, but it didn't set after hours in frig, so I moved it to the freezer where it mostly firmed up, except for a tiny bit in the middle that stayed runny. If you remove the brandy and don't sub another alcohol, cut back on the sugar. This is very rich, so portions would be enough at 1/4 C. I probably won't bother with this again, and will look for a more reliable recipe.
