Spicy Yellow Rice and Smoked Sausage

I made this recipe so many times that we had to make a point to take a break from it. It's great if you're looking for something very quick and easy to make for dinner. The first time I made this I followed the recipe exactly and it was tasty, but I always find that recipes never have enough spice for my liking. Now I usually amp things up with a few jalapenos or cayenne peppers and only one bell pepper, and I usually throw some cajun seasoning into the yellow rice as it cooks. Using hot salsa of course adds more heat!

Chewy Coconut Cookies

I don't like coconut at all, but I made these cookies for my grandfather for the holidays. I followed the recipe to the letter, but I added about a half a cup extra coconut. Boyfriend was the taste tester and he loved them and said they had a wonderful texture.

Chocolate-Dipped Peppermint Bark

This recipe could not get easier! I decided to use a food processor to blend some of the peppermint candies, and I put the rest in a zip-loc and smashed them up with a meat mallet (great stress reliever, haha). This gave me two different textures in the candy and worked out really well. It's so good!

Soft Chocolate Cookies

These cookies are exceptional! I folded semi-sweet chocolate chips into the mix for a little extra meltiness in the middle and we loved them. They're like tiny cakes.

Andouille and Chicken Creole Pasta

My boyfriend and I love this recipe. I've made it with both pasta and rice, and we both agree that using rice is better. Adding a can of tomato paste to the broth gave it a bit more of a bite and thickness...The sauce recipe listed here is just fine, it was just a bit too thin for me. I added quite a bit more creole seasoning and threw in some cayenne pepper as well, because hey...Creole things need to be spicy. ;)
