Waldorf Salad I

Very yummy recipe that reminds me of egg nog (because of the mayo and nutmeg). I used light mayonnaise and, instead of cream, fat free Cool Whip. I had no lemon, but I think the salad came out great regardless. I added cauliflower and diced boneless/skinless chicken breast. Tomorrow for lunch I will be eating this salad on a whole wheat pita, but it also tastes amazing on its own!

Quick Chicken Divan

Giving it four stars because of the changes that I made. I added cooked penne pasta to the bottom, and since I like to "lowfat" everything, I used 98% fat free cream of mushroom and cream of celery soup. I left out the cheddar cheese, added 1/2 tsp dried oregano, 1 tsp garlic powder, and and extra tsp of lemon juice. 25 minutes into baking, I sprinkled with a mix of lightly buttered Italian breadcrumbs and shredded parmesean cheese. Made this for dinner last night and it was a hit! Even those in my family who hate broccoli and mayonnaise couldn't even tell it was there.

Apple Oatmeal Cookies II

So good! And they smell wonderful while baking. Instead of apple, I used 1 ripe banana (mashed) and I added 1/4 cup brown sugar to the recipe. Also, since I don't have quick oats I used 4 packets of instant "brown sugar and maple" oatmeal, which I think helped the flavor. Their consistency is like that of banana bread, so they're more like muffin tops than cookies. I've been heating these up in the microwave and eating them with breakfast every morning. Will definitely be making again!

Zucchini Frittata

Excellent recipe! I added chopped red bell pepper and seasoned with some garlic powder. No swiss, so while it was cooking in the pan I put some munster cheese in the middle, folded it over, then dug in. Only thing is the zucchini seemed a bit underwhelming, probably because I judged the portion by eye, so next time I'll be less shy with it.
