Best Stovetop BBQ Ribs
I usually slow cook the country style ribs, but had nothing else thawed tonight and found this recipe. The sauce ingredients reminded me of my grandmother's bbq sauce, and though I was skeptical of getting them tender on the stovetop, they came out perfectly! Tender enough to cut with a fork. I did not make any substitutions.

Guacamole Chicken Melt
I found this recipe by entering the ingredients in the search function. I can't cook with salt or butter, so I boiled the chicken breasts until done, sliced them in half long-wise, seasoned with some garlic powder and broiled with the guacamole and very thin-sliced pepperjack strips. I served with roasted, fresh beets (recipe also from this site) and it made a really tasty and pretty plate! I will definitely make this again.

Maple Glazed Chicken with Sweet Potatoes
I found this with the ingredient search. Simple to make and just enough taste without being too sweet. Had my doubts on the Montreal Style Seasoning, but the sauce wouldn't have worked without it. I did use sugar free (read: fake) maple syrup and it was fine. I use a lot of frozen chicken tenders and eat sweet potatoes 2-3 days a week, so it was a winner for me.
