Balsamic Roasted Pork Loin

Very tasty. I think the number one problem with most of the critics is inept altitude adjustment and faulty butchers. I graduated from culinary institute of toronto and the cuts of meat we produced were choice. Its a shoot when you're out nickle and diming joe schmo for a pork loin, but even for you there is some hope. When you get home from grocery, let the loin breathe(yes out of the package) for about 5 hours outside to rekindle the juices. Then proceed with the recipe.

French Toast Sausage Fluffins

I'll have to admit- I was a bit skeptical when contemplating baking the french toast fluffin but now that I have I must say they are fabulous! Crisp browned skin on top, rich and creamy ample filling-My girlfriend Daisy also made a batch and I ate all of those too! Just a tad bit yeasty, but hey-I like the taste of yeast for a late night snack anyways! I did not use corn oil because I don't believe in corn.

Cheese's Baked Macaroni and Cheese

I did find this recipe to be a bit drab and plain..but if ye like things like that then go on an try it for youselves. You see I have this cat..its a little black cat names Minstrel. He loves gettin into the cold cellar and eating the cheese. We spun a few cheese cloths when grandad had the loom operational.. but you know how the temper of a loom is like the temper of any woman. Well we had made a few wheels of somes finest goat cheese this side of texas and Minstrel would go on down when he could pry the door ajar and roll in the catnip mixed in with the other spices we hung to dry. Come two weeks I had not set foot in that cellar I went down and little cat had coated the wheels solid with every spice in the cold cellar spices everywhere! Daddie used ta tell me "you never sent a devil to cold water without a hat". Now, I aint been a good christian man all my life but I did see the devil in that little minstrels eyes when I tasted the spice mix coated on the cheese that day. I sell 'em just like that and two wheels a year come out of that little cellar. Minstrel is gone now but his recipe lives on you can find us if yer over in the seattle area.

Cajun Spiced Pork Chops

Loved it! I actually made a slow cooker with my kids this past christmas eve to entice santa to our house first with the sweet smells of country spare ribs southern style like where I am from. I met my wife in seattle, I am from Louisiana and I have been trapped in this big rainy city eva since! Enough about me though...When I found this recipe to be bland I said to myself, "self, we gotta get some of mammas spices up on this pig!" I know my ma would be proud so I gathered up the littlins' and packed'em in nice and right to the Excursion and headed ova to albertsons grocers they're a nice establishment if ya eva need to go out late like I do they is usually open round the clock except of course for holidays and observing the national presidents days...come to think...they is open on the national presidential observance days but holidays none the less most times till ten o'clock and so forth but we went on ova that christmas eve and they was open till ten that night so I had my list my mamma used to keep a little box with notes and measurements so now so do I well I had one of her old notes of spices she had writ it on an old baking soda top the little flap that you spoon through the measurements and flatten out the little spoon so you don't get too much and writ rite on it was Sorghum. I remember when I was little Daddie would bring us kids down to the old pond to catch catfish and he had a little red boat named Dixie. He Would say "kids, get up in Dixie! Go on, now!
