Sugar Cookie Frosting

Reviewed: Dec. 1, 2011
Perfect. You can eyeball the sugar and shortening. I halfed the recipe but put in a bit more than 1/4 cup shortening then I just added powdered sugar. Also put in teaspoon vanilla and I always use cream instead of milk. Either way turned out soooo good.

Blackberry Cheese Pie

Reviewed: May 22, 2011
This pie is excellent! I made some modifications though as I do for all my recipes. I believe each recipe is a cooks way of expressing their artistic talent in cooking. What I did different is I put 8 oz cream cheese in and 2/3 cup whipping cream. I put in mostly raspberries and little bit of blackberries when crushed to make the sauce. (along w just under a cup of pineapple orange juice. The thing that took this over the top is I put in 1 teaspoon lemon extract and folded in 2 cups of blackberries. SOOOO good. I also paint the crust w melted choc. and put it in the fridge to set before adding anything. This is addition to all the rest of the ingred.

Double Layer Pumpkin Pie

Reviewed: May 20, 2011
Ok LOVE this pie. The modifications are 8oz of cream cheese and 2 Tb sugar with no milk (along w the whipped topping). Freeze it after first layer for about 10 min. Put 3/4 cup cold evaporated milk. and 1 and 2/3 packages of vanilla pudding mix. Then mix it together until smooth. Then put 3/4 of the 15 oz can of pumpkin in it(not cup the can). Put 1/4-1/2 t pumpkin pie spice. and 1/4-1/2 t cinnamon. Do this and your pie will be perfect. Not runny or too sweet, not too much filling and will taste pretty much like pumpkin pie. For the rest of the pudding mix and canned pumpkin you probably could make a mouse out of it but haven't tried it. Just saying.

Strawberry Pie

Reviewed: May 19, 2011
I loved this pie. You know it is good, because she has it published in the Taste of Home pie recipe book which I bought at HEB 2 days ago. Anyway, I was skeptical that it would be too sweet and that it would be artificial tasting but with a few additions its by far one the best pies and you will want to share it with everyone. Ok I put in 2/3 cup sugar instead of 3/4. Perfect amount of sweetness. Used a reg (shortening, flour) pie crust that i just made, cooled it then I painted the inside of it with melted milk choc chips. This prevents it from being soggy.(I read this in a past review and it really works!!)Just make sure to put it in the refrigerator and let the chocolate set up before you fill it. I didn't put the gelatin mixture in the fridge. I just set it aside and cut up the strawberries, when I was done it was cooled enough. Just make sure to pile a lot of strawberries on and sort of mix it lightly just enough for flavor. Thanks so much for this recipe. Love it and thanks for listening to this long review. Learn anything.. LOL I learn so much from the reviews I read.
