Blueberry Gelatin Salad

SO happy to find this recipe! My aunt used to make this every time we came to visit and it was always something I looked forward to. This is also good with black cherry jello and sprinkled with chopped walnuts!

Cha Cha's White Chicken Chili

Excellent, fairly easy dinner on a below 30 degree night! To pre-cook the chicken, I brined & poached it in salted water with about 2 Tbsp. southwest seasoning. I'm almost glad that I brined it, because the chili itself was a tad underseasoned. I added a few tsps of salt to perk it up. Great heat level for my taste (I don't like too much) and the 4 of us finished off the pot for dinner with some corn bread. Will be making this again!

Boiled Water

Turkey Tenderloins

Made this yesterday evening and the flavor was awesome! Definitely not too salty. I would say the previous commenter hasn't tasted a brine either - very salty, but doesn't oversalt the brined meat. This was wonderful. I served it with sauteed kale and mashed potatoes.

Banana Sour Cream Bread

This was a huge hit with my family! The only change I made was to sub nonfat, plain Greek yogurt for the sour cream. I also halved the recipe for a smaller bunch. We gobbled it up in no time! This is my new go-to banana bread recipe.

Cake Mix Cookies VIII

I made these exactly to the recipe, but decreased size and got about 48 cookies. They were absolutely incredible and I love a one-bowl recipe! They were a huge hit with my family - perfectly chewy.

Blueberry Cream Cheese Pound Cake I

This was such a great recipe! I did swap out applesauce for the oil, but with the looooong mixing time, it was still not too dense. It was just a little too sweet for my taste, so I will probably leave out the extra sugar next time. I even used reduced sugar yellow cake mix and it was still very sweet. Great recipe for brunch or dessert!

Fluffy White Frosting

So impressed with this recipe! I will never buy a container of frosting again. Now that I've tried this, they all taste artificial and grainy. This recipe gave me plenty of perfectly sweet, marshmallow creme-like frosting. It was too much to cover a 9x13 cake - definitely better suited for a layer cake, so I'd recommend cutting it in half for the pan I used. It looked lovely on the cake - bright white, fluffy and glossy. I will be using this recipe in the future.

Chocolate Puffed Wheat Squares

I have tried this recipe twice now. I followed the directions to the letter. I let them cool completely the first time (2 hours) and they crumbled. 2nd time? Cooled 2 hours, cooled another hour in the fridge. Still crumbled. It made a decently tasty crumbly mess, but they were completely unsuccessful as a bar.

Orange Sunshine Cake

I can't speak personally as I didn't get to eat any. It was wolfed down in minutes at a 4th of July cookout! Almost followed the recipe completely, but I accidentally got the 8oz container of Cool Whip. I was afraid I didn't have enough icing for 3 layers, but it worked wonderfully and wasn't too sweet! I will say the instructions aren't very clear when making the frosting. I learned the hard way. Don't make the pudding to fold into the whipped topping & pineapple. Just fold in the pudding mix. I had to end up with 1 batch of liquid icing to figure that out :)

Tiramisu Layer Cake

This was an awesome recipe! I do think I may have used 8" pans so I had a lot of filling left over, but it was a hit - just enough coffee flavor and not overly sweet. I would love to make it more often, but mascarpone isn't cheap. May try subbing neufchatel next go around. Great recipe, though!

Pumpkin Crumb Cake

I suppose I was expecting something more like a crumble or cake, but it was definitely like eating pumpkin pie with a really thick crust. I enjoyed the crumble on top, but it just felt like it was missing something. It might be better with spices other than cinnamon (and more of them!) and a thinner bottom layer. As written, we just thought it was alright.

Ranch Oyster Crackers

Made a huge batch to take to a tailgate, and they turned out great! I ended up making about 7 cups with the full packet of ranch seasoning, but it was the perfect amount of seasoning. Easy and tasty.

Banana Crumb Muffins

These were pretty good. It made 12 large muffins instead of 10(but I did use 3 large bananas). The first batch was eaten in a day by 5 people, so a 2nd batch was requested. The first time, I had crumb topping leftover.. even with 12 muffins. The 2nd time I used it all and the muffins had a wonderful, crusty top, though even with 12 muffins, it was still a bit too sweet. I'll probably use only half of the crumb mixture next time. I also added extra cinnamon to the batter on the 2nd batch and I got better reviews. They needed a little spice!
