Taco Seasoning III

Excellent! When reading the recipe, I had thought that there was too much chili powder, so I added it in increments and tasted after each. I ended up with exactly what the recipe had called for! I did cut salt in half and added a dash of cayenne pepper for a bit of a kick. I'll definitely be making this again!

Hearty Ham Casserole

This was a great recipe for using leftover ham and definitely had a comfort food feel! I substituted frozen broccoli florets instead of corn, used about half an onion, and added garlic to the onion. It was easy to throw together and made great leftovers!

Grilled Sausage with Potatoes and Green Beans

Easy prep for a great meal. I used turkey kielbasa as a healthier sausage, and farmer's market fresh veggies. I ran out of room in my first foil packet and made a smaller one too. I cooked over medium heat on my grill and it charred the smaller pouch. The larger one turned out perfectly though. Next time, I'll be more careful of the temp, time and pouch size balance. This was even better as leftovers.

Honey Ginger Grilled Salmon

I liked this recipe because it featured ingredients that I always have on hand. It was quick and easy. It turned out pretty good - very moist. For me the soy sauce was a bit overpowering, so I'll probably reduce it next time. I think I'll also take the suggestion from another reviewer and reduce the remaining marinade into a glaze for a nice sauce.

Green Bell Peppers stuffed with Tomato Lentil Couscous

I usually make stuffed peppers with rice, so this was a neat idea. I had to substitute a different flavor of couscous since I couldn't find tomato lentil. Very tasty, although the pasta sauce left it tasting pretty Italian. I will probably make again using tomato sauce instead of the pasta sauce.

Chicken, Rice and Vegetable Soup

Easy Indian Butter Chicken

Excellent! I chose this recipe over others for butter chicken because of the shortened ingredient list. I followed the suggestion of another reviewer and cooked everything in one pan (instead of baking the chicken). I found 3 cups of cream too much and only used 1. I also cut the pepper in half for a milder dish. Tasted just like India Kitchen!

Beer Batter for Fish

After reading other reviews, I cut the recipe in half and still had extra. I used only 1 egg, substituted Old Bay for the garlic powder, and used more beer to thin it slightly. I used the batter with Walleye - it was fabulous!! It stuck well to the fish, browned perfectly, stayed crispy, and tasted delicious!

Penne Pasta with Spinach and Bacon

This was a great meal! Following the recipe, my spinach came out a little too wilted (more like soggy and limp) but the dish still tasted great. Next time I'll just toss the spinach with the pasta right after draining.

Traditional Chicken Curry

This is excellent as a starting base - don't be afraid to try substitutions though. While it might not be authentic, this tastes great with about 2-3 tbsp of yellow curry, a handful of yellow raisins, and coconut milk instead of the yogurt.

Chicken Tortilla Soup I

Excellent - very hearty. I added a few fresh jalepeno peppers and a bell pepper in place of the canned chiles. Trying adding the uncooked (even frozen) chicken to the boiling tomato/broth mixture. Boil til chicken is cooked through and then remove to shread and toss back in. Very easy!

Carrie's Bruschetta Appetizer

I've made this twice and both times had no leftovers! The first time I couldn't find the herbed feta, so I added garlic powder, basil and oregano to the plain kind. I think it turned out better than the second time when I used the store bought stuff. Either way though, great stuff!

Basic Crepes

I've made this several time and they always turn out great. I have problems getting the batter to be completely smooth without all kinds of air bubbles though. They still taste great though - easy to sweeten with fruit or turn into a meal with veggies and cheese.

The Best Vegetarian Chili in the World

Absolutely fabulous! I really enjoyed this, even as a usual meat eater. I used canned tomatoes and less chili powder for a bit tamer flavor. So good that it will probably replace my usual meat one.
