I am a busy wife and mom-to-be. I also work full time, so I adore quick and healthy dinner ideas. When I have extra time, I love trying new recipes, especially ethnic dishes. With a new baby on the way, I've also started to search for make-ahead and freezable meals.
My favorite things to cook
My signature dish is chicken Parmesan, and I love making it with homemade marinara sauce. It's a dish that I have experimented with a lot and have learned to cook really well. I also love making curry chicken and trying variations from different regions.
My favorite family cooking traditions
My extended family is large enough that cooking for everyone is a real undertaking. So Thanksgiving is the only holiday where a full hot meal is actually made. And for as long as I can remember, my mom has made the pies - both pumpkin and apple. I still love helping to peel the apples, competing to see who can get the longest, unbroken peel!

I have finally figured out how to make gravy and sauces!
My cooking tragedies
My recipe for brushetta requires that I toast the bread under the broiler before topping with the tomato mixture. But about 90% of the time, I get distracted and end up having to scrape off the burnt edges of the bread. :(

Taco Seasoning III
Excellent! When reading the recipe, I had thought that there was too much chili powder, so I added it in increments and tasted after each. I ended up with exactly what the recipe had called for! I did cut salt in half and added a dash of cayenne pepper for a bit of a kick. I'll definitely be making this again!

Hearty Ham Casserole
This was a great recipe for using leftover ham and definitely had a comfort food feel! I substituted frozen broccoli florets instead of corn, used about half an onion, and added garlic to the onion. It was easy to throw together and made great leftovers!

Grilled Sausage with Potatoes and Green Beans
Easy prep for a great meal. I used turkey kielbasa as a healthier sausage, and farmer's market fresh veggies. I ran out of room in my first foil packet and made a smaller one too. I cooked over medium heat on my grill and it charred the smaller pouch. The larger one turned out perfectly though. Next time, I'll be more careful of the temp, time and pouch size balance. This was even better as leftovers.
