Roast Chicken with Thyme and Onions

I followed the recipe to a T the first time making it - and it earned a 4 star from me and my roommate. i've since made this about 5 or 6 times, and now I just wing it - nothing is measured - and it always comes out delicious. I took Barb's advice and stuffed the mixture under the skin as well. Delish!

Deb's Scallops Florentine

rated a 4, because i don't think parboiling the scallops is such a good idea. you can just cook for 5-10 minutes longer with much less effort! I've made this recipe a few times. My substitutions are to add a couple dashes of garlic salt, instead of salt; and to then use grated gruyere, instead of the mozzarella. thanks for the recipe, deb!
