A Firefighter's Meatloaf

If you like the taste of Hunt's Manwich sauce, you will like this. The salsa adds the pepper kick, and it has just a slight sweetness from the BBQ sauce. This was very juicy and not too firm and bready. I used dried minced onion and it worked great.

Tart Lemon Sorbet

So full of flavor and perfectly tart. Make no adjustments on the sugar. I used the zest and juice of one medium lemon plus bottled lemon juice. My husband loved it so much that he now claims it is an aphrodesiac!

Beef Marinade I

Oven Barbecued Beef Brisket II

I really improvised and used Dr. Pepper instead of cola, Kraft Original BBQ sauce instead of chili sauce, and added a bit of liquid smoke. I used a 5-pound brisket and baked it at 250 degrees for 6 hours. It was SO tender. I thickened the sauce with a little flour/water and ladled it over the meat. I'll make this again!

Blueberry Buckle

Absolutely delicious! However, the center will not be done if the directions are followed (even though a toothpick comes out clean). Increase baking time by ten minutes, but keep an eye out. Use butter-flavored shortening or butter, and it's tastier.

Candied Almonds

You must cook until the sauce literally turns to dry crumbs that coat the almonds. It will happen, be patient! Also, I used natural almonds, but they turned out a little soft (although the coating was nice and crunchy). I think I will try roasted almonds next time and add more spices.

Fabulous Beef Tenderloin

Luscious! But after the first try, I now use only low-sodium soy sauce. Otherwise it's WAY too salty, and this expensive cut of beef is drowned in salt. As for time, it depends on which end of the tenderloin I am baking (I cut a 6-pound tenderloin from Sam's in half). If it's the thinner, folded end, then the time is correct. If the thicker end, it takes an extra 10-15 minutes to reach the right temperature. Do not overcook! I get rave reviews every Christmas about this dish.

Angel Hair with Feta and Sun-Dried Tomatoes

Fabulous! This has become a staple in our house. Even my picky 4-year-old gobbles it down. The cilantro really adds a wonderful flavor, but it's also good without it. I do add a little more olive oil to make it a tad moister.

Stuffed Jalapenos III

I blanched the seeded peppers before stuffing to take out some of the fire and lessen baking time. Next time I will mix some sharp cheddar in with the cream cheese to give the filling better flavor. Be sure to use toothpicks to hold the bacon on! I didn't, and they did not come out picture-pretty. Still, a simple and yummy low-carb appetizer or light meal!

No Roll Pie Crust II

This is my go-to recipe for flaky, perfect crust and I have used it countless times. My only changes are to measure the oil and salt on the scant side (slightly less than what is called for). Makes a better tasting crust. I am so glad I can now make crust without cutting shortening into flour, rolling it out and making a mess of my counters!

Mock Coconut Pie (Spaghetti Squash Pie)

This was more coarse and dry than I was expecting. I omitted the spices and used Splenda, but maybe should have added some coconut extract and cream to the batter. Next time I will cook the squash TO DEATH! This is a spaghetti squash pie, not a mock coconut pie!

Glazed Cinnamon Biscuits

Tender, moist, quick and pretty! I will never buy canned cinnamon rolls again. These taste better and took me just 10 minutes to put together. I halved the recipe, added 2 tsp. of sugar to the dough to boost the sweetness of the biscuit and used a clear Pyrex dish. They were perfect!

Chocolate Cheese Frosting

Delicious, glossy and lighter brown in color. I disagree that it is a "dark" chocolate frosting with a "tangy" flavor. Rather, it is a balanced, super-smooth, moderately-sweet chocolate frosting that will not overpower your cake. I omitted the cinnamon and kept the frosted cake in the fridge. The frosting stayed smooth and creamy.
