About this Cook
I'm a wife, mom and lawyer who would love to do more with cooking, but I'm pretty much relegated to whatever is quick and tasty. There are some major food allergies to contend with in my house (including to poultry and crab -- can you believe it?), so it's all about being creative and versatile. I'm a bit of a fitness nut, too, so I am always interested in low-carb, healthy recipes that would also appeal to grade school boys!
My favorite things to cook
I love to make pies, soup, cakes, and almost any kind of meat dish.
My favorite family cooking traditions
We indulge in beef tenderloin at Christmas and make sure we make plenty of lemon sorbet in the summer.
My cooking triumphs
Hmmm....triumphs? My family says I am a good cook, so that's enough for me. I did make a cake covered in buttercream roses for a school cake walk that started quite a fierce competition on the floor!
My cooking tragedies
I once used a hand mixer to mash some potatoes and they turned into sticky glue. On Thanksgiving Day, no less.

Jim's Salmon Patties
Moist and delicious! Don't be afraid to leave in all the bones and skin of the salmon -- they cook away and add nutrition. I used fewer saltines in the patties and coated them lightly in very fine saltine crumbs before frying. I also upped the oil by a tablespoon. Made a nice crisp crust. The seasonings were right on. A keeper!

Stuffed Jalapenos III
I blanched the seeded peppers before stuffing to take out some of the fire and lessen baking time. Next time I will mix some sharp cheddar in with the cream cheese to give the filling better flavor. Be sure to use toothpicks to hold the bacon on! I didn't, and they did not come out picture-pretty. Still, a simple and yummy low-carb appetizer or light meal!

No Roll Pie Crust II
This is my go-to recipe for flaky, perfect crust and I have used it countless times. My only changes are to measure the oil and salt on the scant side (slightly less than what is called for). Makes a better tasting crust. I am so glad I can now make crust without cutting shortening into flour, rolling it out and making a mess of my counters!
