Shepherd's Pie VI

My husband and I LOVED this dish. It smelled delicious while cooking and gave us 2.5 meals. I followed some of the suggestions that said to add garlic and worcestershire sauce to the ground beef. I also added 2 Tbsp of sour cream and some oregano to the mashed potatoes, with a sprinkling of paprika on top for color. Also, instead of using carrots, I put a layer of frozen peas on top of the ground beef before adding the mashed potatoes on top. SO delicious, I will be making it again very soon.

Sweet and Savory Ribs

This was delicious! I used country style ribs, and the meat was falling off the bone by the time it was done. Before putting the frozen ribs in the crock pot though, I rubbed them in some olive oil, minced garlic and the salt and pepper. Then I seared the edges, put it into the crock pot and poured the sauce on top. I will definitely be making this again.

Grandmother's Buttermilk Cornbread

Since my husband loves bacon in his cornbread, I fried two pieces. Then took some of the fat from that and used it to grease the pan, instead of butter or oil. I crumbled the two pieces into the batter and it turned out wonderfully. As it was my first time making cornbread, I was surprised that the mixture was so runny while pouring it into the pan, but it rose perfectly and had a great texture still. Finally adding a tablespoon of white vinegar to the cup of milk and letting it sit for 5 minutes is a good substitute for buttermilk.

Savory Pork Roast

I made this for our Canadian Thanksgiving this month and it was a bit hit. I used a pork shoulder roast, doubled the herbs, and put it in the crock pot for 6 hours.

Herb Batter Bread

This was phenomenal! My first time making bread and it was easy to do by hand as I don't have a mixer. My house was a little cool and it took longer to rise than I expected, but the end result was beautiful and delicious. My husband suggested adding more herbs next time for more of a kick and I might. It was great as toast too.

Original Nestle® Toll House® Chocolate Chip Cookies

If you like 'fluffy' cookies, then this is the recipe for you. I use half peanut butter chips and half chocolate chips, plus add about 1/2 cup of walnut pieces. I usually chill the mixed dough before putting on the pan, as this results in fluffier cookies somehow. Also, I just make one pan at a time, keeping the dough in the fridge for another day as these cookies are just DIVINE when fresh out of the oven.

Chocolate Peanut Butter Squares

This recipe gets 5 stars with the following adjustments. My husband's coworkers have started asking me to make this for them again! After about 3 attempts, my last batch turned out the best. * a 13"by9" pan works great, and mine has a cover so it's easy to store. * use 3 cups of powdered sugar, NOT 4. it's too sweet otherwise. * crunchy peanut butter adds a good texture to the graham layer. * only use 2 tbsps butter and extra chocolate chips for the topping. (I used nearly a full bag) * cut the square soon after making it. it'll settle back and you'll have to cut it again, but the final pieces won't break or fall apart then. * it's delicious but very rich, try cutting small pieces, you can always have two then. *^^* (in my 13by9 pan, I cut 36 pieces.)

Cranberry Pistachio Biscotti

So beautiful and delicious. I liked how they were softer than the typical biscotti from a coffee shop. I tried a white chocolate drizzle as another reviewer suggested and that was nice too. The only downfall to these is that it took me nearly 2 hours to shell the pistachios!

Southern Hollandaise Sauce

My sauce was really runny, so I added a tsp of flour to it and it finally thickened up nicely. The lemon taste was strong at first, but after sitting for about 5 minutes was delicious. Also used about 1/2 tsp or more of cayenne pepper and my husband was raving about it.
