Antojitos Minis

These are good and easy to make. Warm the tortillas about 10 seconds in the microwave to soften them and cut out the circles with a round cookie or biscuit cutter. You will still have to fold one side a little to fit it in the mini muffin tins. I just added a few of the ingredients, what I had on hand. Don't add too much salsa or they will be soggy and leak.

Buffalo Chicken Strips II

Very good. I used sour cream instead of yogurt and regular mayo. I also cut the chicken into cubes. We had it for supper with the Spinach and Strawberry Salad on this site.

Walnut Raisin Scones

Delicious. As good as any scones I had in England. Made them just like the recipe says. Wish I could get clotted cream to put on them instead of butter.

Cream Cheese Penguins

So cute!!! These were a big hit at a Christmas party and my nephew's graduation party. They aren't hard to do, just take some time. I found it easiest to do all of one step at a time, cut all the large olives first, then fill them with cream cheese, etc. I used roasted red bell pepper for scarves and a parsley sprig for a green hat. My mom used a square piece of green onion for a mortarboard hat for the graduation party. Cute, cute, cute. Even my husband said, "Take a picture of it!" And they taste pretty good too!

Spinach and Strawberry Salad

Great salad! As others recommended, I halved the sugar, used balsamic vinegar, omitted the poppy and sesame seeds and added chopped pecans. My husband and I both loved it.

Greek Saganaki

Not quite as crispy as the Saganaki I've had in Greek restaurants. Maybe I should have fried them a little longer. But they were delicious! We ate them with tomatoes and green olives. Yum!

Crustless Spinach and Mushroom Quiche

I doubled the recipe and cooked it in a 9x13 casserole dish. It was the first thing all gone from the brunch table at our retreat. I used feta and cheddar cheese instead of the yogurt cheese.

Bacon Mushroom Chicken

Very good. My husband loved it too. I used a turkey thigh deboned instead of chicken. One thigh is plenty for 2 people. I also used just 1 tablespoon of butter but doubled the cream for more gravy and thickened it with a tablespoon of flour. Served it with rice. Yum.

Arti-Cheesy Chicken

Very good. My husband loved it. I didn't use the soup. To make the sauce thicken I just coated the cubed chicken with some flour before cooking it.

Italian Breaded Pork Chops

Coconut Curry Stir Fry

My husband wanted more! I did make a few changes. I didn't have oyster sauce or chili-garlic sauce so I left them out. I also used coconut oil instead of avocado oil. And I increased the curry powder to 2 tsp.and added a good dash of cayenne pepper. The sauce was thinner than I like so I thickened it with about a Tablespoon of corn starch.
