Flat Iron Steaks Marinated in Red Wine

I really loved this, it had a decidedly French flavor. However, my hubby wasn't too big of a fan - said it was bland. Also, you'll think you don't need to cook it so long because the cuts are small, but you really do or it's rare!

Baked Kale Chips

YUM! I used Olive Oil PAM and lightly sprayed them in the pan, stirred, and lightly sprayed them again. I added sea salt and freshly ground pepper. Cooked at 335 for 7 minutes, and I think I should have done 8, but definitely no more! I put hella sea salt on them, and they turned out too salty - my mistake! I will absolutely make these again, but with less salt. We ate them ALL.

Bella's Brussels Sprouts with Bacon

These are amazing! I usually 'tweak' recipes I use on this site, and I've never tweaked these one bit - they're PERFECT! I like to use the leftovers to make a pasta with sausage, tomatoes, and spinach/cheese tortellini.

German Potato Pancakes

I changed a little bit. I used red potatoes (that's what I had on hand). I added garlic powder and used extra onion, extra salt & pepper, and about a tablespoon of extra flour. That having been said, AWESOME!!!! Soooo yummy. :) My hubby loved them even more than me. I did use paper towels to absorb some of the water from the potatoes before adding to the recipe. I let the batter sit for awhile before I cooked it, which meant there was more water that drained out of the potatoes. I just poured it out, but when I make them again, I'll just plan to make the batter right before I am ready to fry them. Also, I cooked them WAY more than 3 minutes a side, but I like things VERY crispy.

Steak, Onion, and Pepper Fajitas

We often use this recipe to utilize leftovers as fajitas. We take whatever meat we grilled the night before and slice it thinly. Then, we use the tequila/lime juice/sauce/veggie portion of the recipe to make veggies. Once that's done we toss the meat in the tequila/lime juice/sauce/veggie and put it in a tortilla with rice, sour cream, salsa, and cheese. It's AMAZING!!! This spice combo is delicious.
