Burrito Pie

We made this ahead of time and then froze it to eat for some of our meals after our son was born - when we knew we would be incredibly busy. Surprisingly, for a meal with these ingredients, I found it only good but not great. It tastes a bit heavy on the beef, beans, and tortilla, and a bit light on everything else. Perhaps this is because it was frozen for a while....

Chicken Pot Pie IX

Per previous reviewer suggestions, I added 1 cup of diced potatoes, 1 can of low fat cream-of-chicken soup, and dashes of thyme, garlic powder, tarragon, and rosemary. The result - a very good pot pie. I am not a huge pot pie fan (perhaps the reason for only a four-star rating), whereas my wife is and would rate this five stars.

Ultimate Breakfast Casserole

Pretty standard taste for this type of dish. I followed previous reviewers and cut the sour cream to 10 oz, increased the eggs. As with some previous reviewers, I am still looking for that great breakfast casserole.

Baked Ziti I

This is a very good recipe - good solid Italian comfort food that everybody loves! We have made it probably half a dozen times - sometimes just for ourselves and sometimes for our families. *Note*: Unless you are really watching fat, I recommend *not* using fat free sour cream in this. My in-laws bought such when we made it at their house, and it greatly reduced the taste - too costly for the amount of fat per serving saved. Fight that battle elsewhere...

No Name Orange Roughy

As much as I like Orange Roughy (probably the best meal I have ever had in a restaurant was an Orange Roughy Florentine), we replaced the Orange Roughy, which is a big no-no nowadays from an enviromental perspective (see "www.mbayaq.org/cr/cr_seafoodwatch"), with imported Haddock. My wife and I still liked the dish quite a bit, although the olives did not work for me.

Chicken Enchiladas I

Very good recipe, and, like most dishes of this type, excellent the next day. My wife loved it, but I found it just a touch on the tomato-ey side. I may try to cut the tomato sauce a little bit next time.

Swiss Chicken Casserole II

Taste was above average for a chicken casserole, and so *very* easy to make. (I joked with my wife that preheating the oven was not only 1 of the 4 instructions, but also 25% of the work.)

Crab-Stuffed Filet Mignon with Whiskey Peppercorn Sauce

My wife and I spent a good part of Valentine's Day making this dish. [Actually, I did most of this, and my wife worked on a champagne risotto.] Wow! Definitely the best thing that has ever been made in our kitchen, and better than what I can hope for at even the best of restaurants. It was simply ridiculous how good this tasted.

I have made this 3-4 times, and it pleases everybody - from my wife, who has exotic tastes, to my parents, who have fairly conservative midwestern palates. It is critical to have a good pizza dough recipe (worth its weight in gold for this kind of stuff), which I fortunately have...

Fantastic Black Bean Chili

Very good recipe. I reworked it per some of the reviews - added small can of tomato sauce, used diced tomatoes with chiles, and added a touch of cumin. I also added some chicken broth but regretted this later - made it far too runny the first night. Successive nights, though, with cheddar, sour cream, and tortilla chips, were great.

Manicotti Alla Romana

A lot of work...but *so* good. The individual components, which I sampled liberally as I cooked, had me ready to be disappointed with the final product. Wow...they do indeed work together. I made it precisely as stated (my wife is not big on sausage).

Aussie Chicken

I was a bit disappointed by this recipe. The proportions seemed to be all out of wack - a bit shy on bacon, *way* too much honey mustard sauce and way too much cheese. My chicken breasts were not even close to cooked in 15 minutes - be careful. Finally, the taste was only average to start, and it made us a bit "green" as we tried to finish a single chicken breast.

German Rouladen

I messed this up a lot...couldn't get the meat thin enough (I tried to roll it with a can), cut the meat strips far too thin (~2" wide), and thus only used about half of the bacon, onion, and pickle. Still, it came out fabulous...hard to believe. Adding a gravy mix (beef and herb) to the leftover drippings, as some have suggested, and then a little water made a wonderful gravy to pour over the top.
