Pumpkin Ginger Cupcakes

I made these for our neighborhood's annual chili cook off and cupcake wars. The biggest problem I had was chopping the crystalized ginger! I had to stop midway through the ginger pile to clean and resharpen the knife! While chopping I kept thinking that it couldn't possibly add that much to the cupcake to offset the labor involved. I was wrong. The ginger makes these cupcakes -- I love that little bit of heat when you hit one of those tiny pieces of sugary ginger. I paired these cupcakes with a variation of maple cream cheese frosting that I added a few pinches of allspice to. Delicious! I lost the cupcake war to a chocolate number with a flashy frosting, but for a non-chocolate cupcake, these are tops!

Apple Walnut Cake

Delish! Great with a cup of coffee. I did make a rookie mistake and tried to depan this too soon. It fell to pieces in about 10 hunks. May not have been pretty, but the family enjoyed it! Thanks for this one!

Mango-Peach Smoothie

Chicken Delicious

I typically don't try recipes that include canned soup (I prefer to know exactly what's included!) but this one was so well received and reviewed I thought I should try. The wine and the lemon fancy this up quite a bit, and the family was shocked that 1) it included canned soup and 2) it was a slow-cooker dinner! The first time made as it's given in the recipe, last night I took the chicken out of the pot after it was cooked, lined the breasts up like soldiers in a broiler-proof pan, put swiss cheese on top, and stuck it under the flame. Oh my.....delicious indeed! Paired it on the plate with rice and ladled the sauce over both. I sprinkled fresh parsley on top because this recipe deserved to be dressed! Thanks for the recipe!
