I am a stay at home mom and love it. I am married to my sweet husband who is in the military. We have a little bundle of joy named AJ. He is just over a year old. I absolutly love to cook and make a nice home for me and my family!
My favorite things to cook
I love doing mexican week. I plan my meals out a month in advance. I also love whipping up a yummy dessert. Only problem there is I end up eating ALL of it! My husband does not do leftovers so I have to be creative so as to not waste food!
My favorite family cooking traditions
We always do a big ham for Christmas and steak for Easter. Traditionally, we do a turkey for Thanksgiving. I'm always up for making new traditions though!
My cooking triumphs
I was quite proud of the chicken chimichangas I made the other night. My husband ate three!!!!
My cooking tragedies
My very first meal I made for my husband while we were dating: I was making "Italian Chicken", and I pulled the potatoes too soon. We went to eat them and they were still quite hard. I put them on our plate and just stuck them in the oven to cook them a little longer (I normally cook them in the crock pot). When I pulled the oven open, the tomato juice was black all over the plate. The chicken was dried out completely and the potatoes were crunchy in a different way. BURNT! I was such a frantic mess that I just stuck the crock pot lid in the sink (hot lid in cold water) It shattered!! What a disaster. I excused myself and went in the bathroom to cry....the next morning I came home to find a new crock pot on my coffee table with a note that said, "I love you!" What was a moment of cooking tragedy ended up being a beautiful marriage of four years and counting ;)

Pepperoni Casserole
This was delicious!!! I absolutely was surprised by the combination of all the flavors. I think the cottage cheese was the biggest surprise to how it compliments the pepperoni. I can't wait to make this dish again. Yummy!!!!

Oven Baked BBQ Ribs
I was crowned queen of the kitchen after I made these ribs. They were so amazing that I can't wait to make them again. Next time I will be having guests over to show off my awesome ribs. Thanks for this amazing recipe! It is now a family favorite!

Grilled Salmon I
It's the best salmon I have ever tasted! Whenever, my husband and I go to a resturant, he always tells our guests, "My wife's salmon is better than this." I use this recipe;)
