I made this for my Memorial Day Party. It was super delicious! I must warn those who do not cook pork that often, that IT WILL SHRINK so DON'T FREAK OUT like I did! This one will be the family recipe for years! Thanks for sharing it! No adjustments were made to this recipe.

Bodacious Broccoli Salad

Reviewed: Jul. 1, 2011
This was really yummy! For me a little too runny. I added Craisins and thought about adding sunflower seeds may next time! Great "new" salad to introduce to the boring old traditions! I recommend making this for your next gathering.

I could not believe how big this thing was! I took it to a July 4th party at a friends house, my biggest fan was an 80 something year old man! He ate it like a side dish! LOL I gave him some to take home!

Antipasto Salad

This was really good! Accidentally added the brocoli before it chilled so I think it soaked up a lot of the dressing.

Salisbury Steak

My kids and boyfriend liked it. My patties fell apart! What did I do wrong??? I had to make a second batch of the sauce to completely cover all my patties. I usually don't fail my recipes but this one I did. Now it's my challenge to get it right. I thought it was ok tasting.

Oven Roasted Red Potatoes

These turned out very nice! Not enough flavor for me though I would add a little garlic powder, salt, pepper and even a dash or too of some Dinasour BBQ Cajun seasoning. Easy dish to make for a quick dinner!

Chicken Marsala

Reviewed: Oct. 27, 2011
Delicious and easy to make. I only made 3 chicken breast. I also felt like I didn't have enough of the mushroom sauce. We only ate two of the breasts and had just enough for them. Just a warning to double the wine/broth mixture if you like a lot of sauce. I also had to use a little more olive oil than the recipe called for. My boyfriend and I really enjoyed this. If your looking for a "romantic evening" with a nice meal without having to go anywhere or pay a babysitter, this dish is easy and quick. Put the kids to bed and turn your dinning room into your own little Bistro for the night!

Chicken Pot Pie II

Reviewed: Feb. 15, 2012
Wonderful taste! Made a lovely Valentine's Dinner for my family, the kids loved it. Not too heavy tasting, fresh and full of flavor. I roasted a chicken a couple days a head of time and that's what I used rather than boiling. I wanted double the recipe but the only thing I didn't double was the potatoes. I substituted Vegetable oil with butter, and I like my veggies tender so I simmered longer about 10 minutes before adding the potatoes. I substituted the flour with corn starch and waited until after I added the chicken broth to add it. Take about a 1/2 cup of milk or use a 1/2 cup of chicken broth in a seperate measuring cup or bowl, take 2 tablespoons of cornstarch and beat it until blended. When broth is at a rolling boil just add the mixture while stirring until thickened. It's also important to taste test to make sure you added enough salt, pepper and garlic powder. I also used a bottom and a top crust.

Cherry Swirled Cheesecake

Reviewed: Apr. 15, 2012
I would say this is a very good recipe! I baked it a little too long because this was my first cheesecake in a springform pan. I used graham crackers instead of chocolate chip. I would add more than a 1/2 cup of cherry puree between layers next time for a "prettier look". I put my pan in a water bath using a jelly roll pan as suggested on this site. It worked nice. Be sure to use a double layer of foil to prevent water from seeping into the cheesecake. Taste was perfect! I would like to top it with un-pureed cherry pie filing next time just to get the "pretty" look.
