Grilled Chicken and Pasta Salad

Reviewed: Oct. 3, 2012
It's really up to you how good this dish is. You choose the seasoning and that's where it all starts. I used store brand "A1" sauce and Dom Deluise Steak Seasoning, salt and pepper. I bought pre-cut Romaine to save the time, and put the onions on the side. I used a very tasty Kraft Brand Light Rasberry Vinegarette Salad Dressing. Kids even loved it!

Classic Minestrone

Reviewed: Sep. 26, 2012
This is a great recipe. It's the first time I made a Minestrone Soup. I had already bought everything, got home and decided to double the batch, and since I didn't feel like running out to the store again I improvised. I only bought enough broth, and leeks for one recipe, so I used what I had. I used green onion and I had beef boulion. I "eye balled" all of the ingredients and pretty much added more veggies than the recipe called for. Not by much but use your best judgement. Oh and I only used 1 can of beans. I can't wait to make this again!

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

Reviewed: Aug. 29, 2012
This was the first time I've ever made stuffed chicken breasts, I suggest with this recipe you do as I did, and prep the day before by cooking the bacon and mixing it with the feta and other ingredients. Cut up and saute the onions and the potatoes too. Just add water and a couple table spoons of lemon juice to the potatoes to prevent them from turning brown and store them in a sealed bowl. Also store the Feta mix and onions is seperate sealed bowls as well. Be sure to drain the drippings from the bacon into a container while still liquified in the pan. Prepping the chicken and frying it is enough work in itself on the day you plan on serving this dish. I only served it for the four of us and feel as though prep time for a rookie can be almost up to an hour. So just be prepared and leave yourself enough time. Be sure to have extra breadcrumbs on hand depending on the size of the chicken breasts you may need more. I also seasoned the chicken lightly with Garlic Salt, Old Bay Seasoning, and black pepper and dried oregano. When the potatoes are done heat the sauted onions in the microwave for 30 seconds so the mixture softens and isn't cold when adding to the potatoes to mash them.

Fresh Tomato Shrimp Pasta

Reviewed: May 14, 2012
This was dish I normally wouldn't try but it was very good. I would follow the recipe if your not used to cooking with Shrimp. Once you kinda get what you like to add flavor to Shrimp you can start tweeking it. I think substituting the Shrimp with Chicken would work well too!

Pesto Chicken Penne Casserole

Reviewed: Apr. 29, 2012
Very delicious! I too used only half the pesto only because I saw how much a jar of it cost! Ouch...my 7&14 yr old. loved it and that's all that matters. Used my Celebrating Home Roaster Oven pan. This is a huge dish will cook better if you use something larger than a 13x9 size pan.

Cherry Swirled Cheesecake

Reviewed: Apr. 15, 2012
I would say this is a very good recipe! I baked it a little too long because this was my first cheesecake in a springform pan. I used graham crackers instead of chocolate chip. I would add more than a 1/2 cup of cherry puree between layers next time for a "prettier look". I put my pan in a water bath using a jelly roll pan as suggested on this site. It worked nice. Be sure to use a double layer of foil to prevent water from seeping into the cheesecake. Taste was perfect! I would like to top it with un-pureed cherry pie filing next time just to get the "pretty" look.

Chicken Pot Pie II

Reviewed: Feb. 15, 2012
Wonderful taste! Made a lovely Valentine's Dinner for my family, the kids loved it. Not too heavy tasting, fresh and full of flavor. I roasted a chicken a couple days a head of time and that's what I used rather than boiling. I wanted double the recipe but the only thing I didn't double was the potatoes. I substituted Vegetable oil with butter, and I like my veggies tender so I simmered longer about 10 minutes before adding the potatoes. I substituted the flour with corn starch and waited until after I added the chicken broth to add it. Take about a 1/2 cup of milk or use a 1/2 cup of chicken broth in a seperate measuring cup or bowl, take 2 tablespoons of cornstarch and beat it until blended. When broth is at a rolling boil just add the mixture while stirring until thickened. It's also important to taste test to make sure you added enough salt, pepper and garlic powder. I also used a bottom and a top crust.
