Peach-Basil Sangria

Reviewed: Jan. 25, 2009
Yummy! A great way to transform a cheap bottle of white into something delicious. I used a 1.5L bottle of wine, 1/3 c. sugar, 2-12oz cans of peach nectar, and a 0.5 oz pkg fresh basil.

Lemon-Thyme Cornish Hens

Wish my skin would have turned out crispier. I did put some of the basting sauce under the skin before roasting. Any other suggestions?

Spinach Salad I

Reviewed: Feb. 16, 2009
Quick and easy version: I used 2 servings of the dressing, 1/2-clamshell baby spinach, and 4 slices bacon. You can just microwave the dressing until boiling (~1 min), much easier than stovetop!

Canja

Two thumbs up! My subs: I used one pkg of chicken (~1.5 lbs) - this seemed like plenty. I did double up the ham to please my meat-loving fiance. I also subbed a can of diced tomatoes for the fresh (though in retrospect I think the fresh would have been much better.) Overall, I think this soup took almost 2 hours from pot to table. Next time I'll increase the rice and use cilantro for the parsley.

Steak and Spinach Salad

Reviewed: Jun. 15, 2009
I thought this recipe was rather vague, which lends itself well to adaptation. I marinated my meat in a mixture of oj, lime juice, garlic salt, and pepper for about an hour and then cooked it on the foreman (4 minutes first side, flip, 3 minutes on the second side.) I let the meat sit 15m before slicing it with the grain. Served it buffet-style with the orange viniagrette from this website. Let the hubby pile on the ingredients to his liking: spinach, steak, tomatoes, red onion, craisins, sunflower seeds, and mandarin oranges. He gave it a big thumbs up!

Quiche

Reviewed: May 11, 2009
Was planning on serving this for my wedding reception. Good thing I practiced it the week before. Easy to whip up, but did not look appetizing once cooked (unfortunately mine browned unevenly and the crust got overly dark dispite the foil.)

Ham N Cheese Potato Bake

Yummy! Perfect comfort food on a cold night. I made a half recipe and divided it evenly among 4 ramekins. Only needed to bake 45m.

Delish! Made exactly as directed, except the salmon needed ~4 more minutes. Definitely recommend keeping the jalapeno seeds!

Oatmeal Chocolate Chip Pancakes

Yum! Be sure to let the batter sit 5-10m so the flax and oatmeal have time to thicken it up. Really yummy with peanut butter on top.

Though tasty - was not a fan. I was hoping to appreciate more bacon flavor.

Yum! Perfect for Thanksgiving, didn't have to do sweet potatoes & mashed potatoes separately. Beautiful colors together.

Fresh Cranberry Relish

Made some mods - used only 1 apple, added some chopped celery and walnuts. I also dissolved 1 pkg cherry jello in 1 c of the drained juice. Wanted to add some more red color.

Tasty! Since I had honey-dijon, I omitted the honey. Also splashed in some olive oil per previous reviews.

Yum! Crunchy edges, soft center. 25 minutes was perfect in my oven. For the frosting be sure the butter is very soft. I added a pinch of salt and 1.5 tsp of kahlua!

Spinach Pasta Salad

Reviewed: May 11, 2009
Absolutely delish! My subs: 9 oz of regular-size spinach, plain feta (couldn't find the flavored), 1/2 red onion, 6 oz can black olives sliced in half, 4 tsp lemon juice. As a side, this can easily serve 12, we had about half left over after serving 7. Will be making this next weekend for my wedding reception.

Yum! Like it with the pink lemonade. Will try limeade next time - margarita style! When sipping on it, you definitely can't taste the high EtOH content.

Delish! My bacon didn't end up crunchy, though. Next time I will cook it separate from the chicken.
