Curried Cashew, Pear, and Grape Salad

Yum! Pretty simple to make. I added the nuts before tossing - which I will not do again. Every bite of the salad was super spicy. Next time, I'll add the nuts after tossing and some more grapes. Anyways, absolutely delish.

Southwestern Lentil Salad

Yum! Just a few tips: 1 c dry lentils is approximately 3 c cooked, I drained one can of corn and threw it in instead of the frozen, beware of the onion. Somehow I ended up with an unnaturally strong onion that overpowered the rest of the ingredients. Might need to cut back. And then I cut the oil in half. Made a HUGE bowl. Yum!

Slow Cooker Beef Stew I

Perfect after a cold day. Here's my mods: decreased meat to 1 pkg (1.34 lbs), increased potatoes to 5 small, increased carrots to 6, increased celery to 2 stalks, used 1 can (12 oz) of beef broth. Mine turned out very thick and hearty. If you like yours more like a soup I'd recommend an extra can of broth. Served mine with a few dashes of Tabasco. Yum!

Spinach Salad I

Quick and easy version: I used 2 servings of the dressing, 1/2-clamshell baby spinach, and 4 slices bacon. You can just microwave the dressing until boiling (~1 min), much easier than stovetop!

Two thumbs up! My subs: I used one pkg of chicken (~1.5 lbs) - this seemed like plenty. I did double up the ham to please my meat-loving fiance. I also subbed a can of diced tomatoes for the fresh (though in retrospect I think the fresh would have been much better.) Overall, I think this soup took almost 2 hours from pot to table. Next time I'll increase the rice and use cilantro for the parsley.

Gramma's Date Squares

Delish! Absolutely divine while they are still warm and gooey. My subs: 1/3 of all-purpose flour with whole-wheat flour, halved brown sugar in crust, no brown sugar in filling, and cut out 2 Tbsp of the butter. I used the prior recommendation of 2 c. dates which came out just right. I also pre-baked the crust while the filling cooked.

Arrabbiata Sauce

Spicy! Great flavor overall - definitely goes well with a huge piece of toasted cheese bread. Definitely is a thin sauce, but the big chunks of tomato balance it out perfectly.

Cranberry Upside-Down Coffee Cake

This was a hit! Gorgeous presentation. I definitely recommend wrapping it in foil as described or putting the springform pan on a baking sheet because the cranberry juices leak. Yummy!

Butterscotch Bread Pudding

Wow! This was a hit. A half recipe fits perfectly in a pie pan. It's rich enough that you could serve up to 5-6 with a half recipe, though I much prefer leftovers!

Basic Ham and Bean Soup

Delish! I wish I would have read the reviews first because I definitely would have cut back on the water. Instead I added a large cube of veggie bouillon and used my hand blender a bit to thicken and flavor the broth.

Feta Cheese and Bacon Stuffed Breasts

Very good! I'm not sure where you can find slices of feta so I used the crumbled. Rather than going through the mess of frying up baking I used the precooked kind. Easy, tasty, and a delightful presentation.

Peach-Basil Sangria

Yummy! A great way to transform a cheap bottle of white into something delicious. I used a 1.5L bottle of wine, 1/3 c. sugar, 2-12oz cans of peach nectar, and a 0.5 oz pkg fresh basil.

Yummo! Just line the pan with tinfoil for easy clean-up. I def recommend using the broiler. After 30 minutes at 350 and 5 on broil they still weren't crunchy.
