Chess Pie

If I remember correctly I made this exactly according to the recipe. I had never had or really known of chess pie until recently. I thought it came out the way I imagined, and was very tasty and sweet (probably appropriately). I brought it to work for a co-worker who said it was very good. Throughout the day I had several people come up to me saying it was lethal (as in extra delicious), and it was gone in no time! Based on everyone else's reaction, this recipe is great!

Butterbeer III

Surprisingly I didn't find this to be too sweet. It was really creamy and delicious. It was fun to make, but definitely a rich heavy drink. If you serve this with a heavy meal you'll be in a food coma for sure. Give it a try!

Jay's Signature Pizza Crust

This recipe is easy and delicious. I haven't gotten the crunch I desire yet, even with prebaking, but I think with a pizza stone it will be just right. Great flavor. Definitely give it a try.

Real Homemade Tamales

This was my first attempt at tamales, and I think it was very successful. I doubled the recipe and I think I had 36 small tamales. Next time I would triple it because I kept worrying about running out. I added two medium potatoes to the mix because my family does, and I would definitely add them next time. I was sort of bummed to waste all that pork broth, next time I would probably just use it in place of the beef broth. I added a tomato to the boiled chiles, and pan fried three of the chiles with probably 4 chiles japones. Next time I would probably add more tomato to my mix just because I thought the tamales needed a brighter flavor. Definitely steam the tamales in an upright position with the open side up. Mine were small and took about 1 hr 20 mins. I topped the tamales with some sour cream I mixed with some chile sauce, and some homemade red salsa and those fresh flavors brought the tamales to life. DELICIOUS!

Favorite Old Fashioned Gingerbread

Wonderful! I doubled the spices and added 1/2 cup applesauce. I'll definitely make this again! I made so many things for Christmas but this was one of my favorites. Next time I think I would try half molasses with half honey. I think that would be better for my taste. I used unsulphured molasses as someone suggested.

Amazing! I used Trader Joes strawberry preserves and they are fantastic! Way smaller than I am used to, but I sort of like them this way. I am only sorry I didn't triple this recipe.

Unbelievable Chicken

This recipe was SO easy! I followed the recipe exactly, and cooked stovetop the next day. The marinade became a sort of slightly Asian barbecue sauce. It was wonderful! I marinated chicken thighs instead of breasts and the meat was just scrumptious with all those flavors! Next time I would probably add a little heat, and use 1/3 cup sugar instead. I like a little more kick. Restaurant quality recipe for sure!

Mrs. Sigg's Fresh Pumpkin Pie

Make this! I bake all the time with much success, but this could be the best pie I've ever had. I didn't have a fresh pumpkin to use, so I used trader joe's canned pumpkin. I was worried that it wouldn't be sweet enough but after tasting my pumpkin mixture I figured it would do. I also used 1/2 white sugar and 1/2 regular brown. That was all I had, and now that I think of it mixing white and regular brown would seem to equal light brown. lol. I read someone else's review who commented on the mixture being very runny. It is very soupy but it will bake to perfection. I think mine actually took a little over an hour. Just check that it has stopped jiggling and follow the toothpick test. I used the "Best Ever Pie Crust" from this site (prebaked at 375 for 10 mins). It was just perfect! My husband and I couldn't get enough of it.

Best Ever Pie Crust

This is the second time I use this crust, and somehow this time it is much better than the first. :) I must have done something wrong the last time but it was great then too. Pre-baking must have actually made a big difference. I prebaked at 375 for 10 minutes. Anyway I made a pumpkin pie this time, and as amazing as the filling was I can honestly say what took that pie over the top was this crust. It was flaky and delicious and I'll probably use it forever.

Fresh Cherry Cobbler

This was wonderful! I love cobblers, so it is no surprise how much I loved this. It tasted just like I imagined, maybe better. Here are the adjustments I made: I used coconut oil instead of butter which was a wonderful flavor to incorporate, and made me feel better about what I was eating. I used only 1/2 cup white sugar for the batter, and only 1/2 cup white sugar for the cherries. I used sweet cherries and it was a perfect amount of sweetness. With the cherries I also added cinnamon, a splash of vanilla, and a drizzle of maple syrup. Best dessert I've ever made!

Good Old Fashioned Pancakes

I was worried about changing the recipe, but I was all out of milk. I used about 1/2 cup coconut milk, and the rest was buttermilk. The batter was unusual for me, although it looked amazing. Make sure you don't dump it all in the center because it doesn't spread very well (at least not the way I made it). Anyway the pancakes were BY FAR, the Fluffiest, moistest (is that a word??), and most delicious I have ever made. I flipped them about 30 seconds after the bubbles BEGAN to appear, and for the first time with this method I didn't burn them! So to recap, buttermilk, make 'em thin, flip em early. Yum! Of course, the fact that I super sifted the flour must have to do with the fluff factor. Anyway top with honey, slivered almonds, and shaved strawberries.
