Roasted Kohlrabi
My husband made this last night, and it was a big hit with all of us - including our 3-year-old and our 1-year-old. Delicious! A new favorite. It was our first time having kohlrabi, and it tasted like a mix between potatoes, turnips, and heaven. We also had raw kohlrabi and radish "carpaccio" the same night, but this recipe was my favorite of the night. Felt like we were indulging, but it's healthy!

Fast and Easy Pancakes
I am known in the kitchen only for my ability to reheat frozen pizza - NOT make homemade anything. But this was so easy! I didn't use a blender - just a whisk so my daughter could help stir. I also did half whole wheat flour and half regular white flour. And, like a few others, I only used 1/2 cup sugar and added some cinnamon. Yummy!

Baked Spaghetti Squash Lasagna Style
So yummy! I'm a terrible cook, but this was easy and foolproof. Like another reviewer, I also left out the olives and used chicken bouillon. And I used tomato sauce instead of stewed tomatoes. I added just one link of sausage to give it more substance. YUM!
