Coconut Macaroons III

Reviewed: Dec. 14, 2006
This was my first time making coconut macaroons (or any macaroons, really) and they turned out great! I used 1 tsp. vanilla extract and 1 tsp. almond extract, per other reviewers suggestions. I love the flavor, but can definitely taste the almond extract; someone who doesn't like the almond flavor should probably use less, or just stick with the vanilla. I could also taste the salt just a bit, but that worked for me because I love the salty/sweet combination. I can't wait to bring these to my family Christmas party this weekend! I'm sure they'll be a hit.

Slow Cooker Chile Verde

Reviewed: Sep. 26, 2006
This recipe turned out very well! I used jalapeno salsa, which made it very spicy, but I made it for my fiance and I, and he LOVES spicy food. He even requested that I make this dish again the following week! Definitely a keeper.

Brown Sugar Chops

Reviewed: Sep. 15, 2004
These pork chops are very good; I've made them twice already! The second time, I used a bit more soy sauce and brown sugar to create more sauce, since it is very good. I also decrease the baking time when using thinner pork chops. They come out tender and full of flavor. This has become one of my staple recipes!

Amish White Bread

Reviewed: Sep. 15, 2004
I hadn't made homemade bread in years, and made it then with the help of my dad, so I wanted something easy to make. This bread was very easy and very delicious! I didn't have bread flour, so I used all purpose flour, but otherwise followed the recipe exactly. The bread was so good, my boyfriend and I both had seconds. It is a bit sweet, which makes it great with butter on top and a glass of milk on the side. It would also be a good bread for sandwiches if a bit less sugar was used. Still perfect the way it is, though.

Yummy Cube Steaks

Reviewed: Aug. 1, 2004
This was a great recipe, and the steak tasted very good with the tomato mixture. I served with buttered egg noodles, and it was great! I would definitely make it again!

Garlic Green Beans

Reviewed: Jan. 17, 2003
Yum! These were very flavorful green beans. I even got my boyfriend to eat them, and he's not a big fan of any vegetables. I'm going to use these as a side dish with many meals.

Honey Crunch Pecan Pie

Reviewed: Jan. 17, 2003
This was one of the best pecan pies I have made. I loved the honey crunch topping...it tasted like the toffee you find in candy bars. The butter adds a nice touch not found in many other pecan pie recipes. I'll use this recipe for pecan pies again, and am planning to throw out my old recipes.

Italian Style Meatloaf I

Reviewed: Jan. 17, 2003
This was a good meatloaf with lots of flavor. I had to cook it longer than an hour so that it wouldn't fall apart when I removed it from the pan, but after adding some cooking time, it presented nicely and was yummy. I will probably make this recipe again in the future.

Mrs. Sigg's Snickerdoodles

Reviewed: Dec. 22, 2002
These cookies were as good as any snickerdoodles you can get at the bakeries. I was hesitant to use shortening (I prefer butter) but it made the cookies light and airy, and the cinnamon flavor was excellent.

Creamy Peanut Butter Fudge

Reviewed: Dec. 22, 2002
This really was the best peanut butter fudge I have ever tasted! My uncle got angry whenever anyone else ate some because he wanted it all to himself. I've made it three times already and it's the only recipe I will use from now on.

Cajun Chicken Pasta

Reviewed: Nov. 21, 2002
This was a great pasta dish the first thing in a while that my boyfriend said I had to make again soon! I made the mistake of adding milk to the cream, because I was 1/2 cup short, which made the sauce too thin, but it still tasted great. You can also play around with the seasonings and add more or less to your taste. A very versatile, very yummy recipe.

Braciola I

Reviewed: Nov. 21, 2002
This was a very good recipe, and my boyfriend and I both enjoyed it. It was difficult to keep the filling in the beef, but most of it stayed in and it was easy to spoon the rest on top. The meat was a little bit tough, but that may be because I thawed it in the microwave beforehand. But the best part of the recipe was actually the raisins. I wasn't sure how they would taste with beef, but it definitely made the recipe special!

Beth's Chocolate Chip Cookies

Reviewed: Oct. 25, 2002
These cookies were just as moist, fluffy and chewy as everyone has claimed. At the suggestion of another reviewer, I used 1 cup of butter and 1/3 cup of shortening (regular, because I didn't have butter flavor) and they still turned out very nicely. The ONLY reason I'm giving this recipe 4 stars instead of 5 is because I thought a tablespoon of vanilla was a bit too much. Next time I make these, I'll use 1 1/2 tsp. vanilla and maybe 1/4 cup less white sugar. All in all, though, this is a delicious recipe, and my sister likes them better than Tollhouse!

Buttercream Icing

Reviewed: Oct. 21, 2002
This is a very good, basic, simple recipe for cookie frosting. It doesn't taste too buttery, and it is very sweet, but with just the right amount of frosting it adds a sugary kick to cookie recipes. I used it with the "Best Rolled Sugar Cookies" recipe, since that one isn't very sweet, and it was a perfect complement. Just make sure your confectioner's sugar isn't lumpy (maybe use a sifter) or else it won't spread smoothly and evenly like it does on bakery cookies.

Downeast Maine Pumpkin Bread

Reviewed: Oct. 21, 2002
This was a very good, spicy bread. It was moist and stayed moist for several days after baking. It wasn't very "pumpkiny," though, so next time I make it I will probably add a bit more pumpkin and maybe some raisins or nuts. Even so, it's very tasty as is, and my family loved it.

Brown Sugar Meatloaf

Reviewed: Oct. 16, 2002
This was the first time I made meatloaf, and everyone loved it! My family was skeptical about the brown sugar in the recipe, but the sweetness it added really went with the other ingredients. I'm going to use this recipe whenever I make meatloaf from now on. I'm already craving it again!

Creamy Rice Pudding

Reviewed: Oct. 8, 2002
This was a very good rice pudding recipe. I doubled the batch and added about 1 tsp. cinnamon and 1/2 tsp. nutmeg, which added to the flavor but made the pudding a light brown color, so I'll probably just sprinkle the spices on the individual servings next time. The only change I would make in the recipe would be to use slightly less sugar, as the pudding did turn out pretty sweet. But it's still good as is, and was enjoyed by my family.

The Best Rolled Sugar Cookies

Reviewed: Oct. 4, 2002
These are the best sugar cookies! They were simple to roll out and cut, without sticking to the counter, after only 5 or 10 minutes of refrigerating. I iced them for my boyfriend for his birthday, and they were such a big hit that my brother now wants me to make them for him to give to his girlfriend. I will definitely use this recipe for cookies this holiday season.

Famous Butter Chicken

Reviewed: Oct. 4, 2002
Yum! The crackers gave the chicken a nice crunch, and the butter kept it very moist, even after 40 minutes in the oven. It was also the simplest chicken recipe I've ever followed. I'll definitely make this one again.

Chicken Tetrazzini I

Reviewed: Oct. 4, 2002
This recipe was very good. It may have been just a bit too creamy, so next time I might use about 12 oz. of sour cream instead. Otherwise, very yummy...all the leftovers were eaten up (and it actually tasted even better the next day).
