House Fried Rice

The recipe as is either winds up being over cooked rice or under cooked veggies depending on how long you let it go. Read tips from others and dont follow the instructions exactly. Also in my opinion this was way too much seasame oil it left me scrambling trying to disguise the overpowering flavor. Ginger and white wine vinegar helped if you need to disguise the seasame taste like I did. Overall recipe was not what I expected and I am left disappointed with overcooked rice to serve.

Okra and Tomatoes

This reminds me of a dish my mom makes but in my opinion better. I did do a few things different to accommodate my taste. The recipe didn't make it clear if this was what you are supposed to do but I sauteed the veggies in the bacon fat. I caramelized the onions alone first because I wanted to make sure I would not come across any under cooked onions. I also used a combination of my own stewed tomatoes to use some fresh organic tomatoes that were getting over ripe along with a can of whole tomatoes which I chopped up and added to my tomatoes. I had those simmering on the stove while I did the other steps. I also left out the bell peppers simply because I do not like them and don't keep them on hand. Oh and I also used fresh organic okra which I got at the same time as the bacon and tomatoes at a local farmers market. I think part of the reason I enjoyed this recipe was the fresh ingredients I used and the bacon was actually a smoke cured bacon so it had a flavor that really added to the dish. I didn't cook the celery that tender but I liked the added crunch so it didn't bother me at all. I would start with the celery and onion if you want everything soft without letting the okra get too soft. Oh one other change I made was that I chopped up the cooked bacon into little strips and sauteed with the okra, celery, and onion. Without my changes I likely would give this recipe one less star. If you want something spicier add a pepper seasoning or a jalapeno or Serrano pepper.

Best Chocolate Chip Cookies

I have made this recipe many times and recently started making it into a cookie cake. I think this recipe baked into a 9inch cake pan is amazing actually better than just cookies. The stated recipe will make two cookie cakes each over an inch thick. I find that making it in a bar or cake yields more consistent results on the moistness of the cookie. I have a hard time getting the time just right to not get the cookies too crunchy. If you do try the cookie cake idea i upped the temp to 375 and the time to 20-30 minutes or till the top is golden brown. Try experimenting with different types of chocolate, i like it best with a mix of semisweet, white and milk chocolate chips and with walnuts or pecans.

Jeff's Hot Dog Chili

I really enjoyed the smooth consistency of this chili. I used half lean beef and half lean pork as I am trying to get rid of some meat. My only complaint is that it was too sweet for me. I would definitely leave the sugar out next time as the ketchup alone added enough sweetness. To counteract the sweetness I added chili sauce and a little extra chili powder. Once I added the chili sauce it was perfect! Beautiful balance of sweet and spicy. I soaked up the grease that rose to the top when it was done cooking and sat for a few minutes. If you let it cook the full 20 minutes maybe 25 minutes this chili is not runny. Though I only used 8 oz of tomato sauce cause that's the size can I buy.

Sad Cake

Oh my goodness so good. The recipe confused me a little cause it called for oil but didn't say to add it but I did anyway. My cake didn't really fall but it did sink a little bit. I didn't have any nuts so I didn't add the pecans but i did add chocolate chips. I probably wouldn't like it as much without the chocolate but the crunch from pecans, walnuts, or maybe even peanuts would be nice. This is kind of a mix between a cookie bar and a cake. If you like chocolate you must try with a 1/2 cup of chocolate chips. I used semi-sweet chips but butterscotch or m&ms would be good too.

Banana Crumb Muffins

YUMM so good! Very simple recipe and delicious, no alterations needed, I might add a a few crushed pecans or walnuts to the topping mixture to add a little more texture.
